Gypsum and Spent Coffee Grounds. 1

Gypsum is a mineral not a nutrient. Spent coffee grounds add nitrogen to the bulk substrate. Neither are necassary to add. Coffee is nutritious so can be a mold vector if not properly pasteurized or sterilized. Gypsum is inert thus is not a mold vector.

It quite answers my questions but what about liquid coffee, ive used that in brf cakes and didnt have any issues. is nitrogen beneficial to brf cakes?

There's fungi that grow on limestone calcium carbonate a mineral (aragonite and calcite) nebrodensis for instance.
Calcium sulfate also a mineral. Fungi also can grow on it and use it as a nutrient. Remember mold grows on gypsum board if the climate control isn't correct. There's studies on manufacturing gypsum board to be more mold resistant. Also why greenboard exists and gets used in bathroom construction.

Mushrooms like a varying diet so nitrogen is beneficial; slightly. Nitrogen is a constituent of all living matter.

There's no need to add over 5% gypsum by volume of brown rice and vermiculite; dry.
