General misting question
    #24855521 - 12/19/17 11:50 AM (3 years, 4 months ago)

so im using using brf tek, I dunked my cakes 24 hours and put in sgfc. temps are at 68f and humidity is sitting at 100%.
Do i mist even though sgfc is at 100% or do i wait till humidity drops?

Thanks in Advance

Actually you don't measure humidity and it shouldn't be 100%
It should be 90-100% right near the surface of the cakes as they evaporate moisture into the air space. The sgfc usually has a fluctuating humidity between 50-80. You cant put a hygrometer in a spot that gives an accurate reading inside of a sgfc.

Pay attention to the cakes. Or move your hygrometer around until you see a number you like lol.

You mist as needed. When your cakes appear dry you give them a light misting til they glisten in the light. You want beads of water on the surface but not pooling water, so be careful not to over saturate them. Evaporation of moisture from the surface of the substrate is a major pinning trigger, so let beads of water evaporate before misting again
