15 gal cider fermentation looking for tips

Hey all I'm somewhat new to cider brewing although I've got a decent amount of knowledge in the area.

This cider was made with a specific combination of apple juice volumes and is being fermented using bout a 2 Gal starter of Esc Labs St Remy.


Please check out my vid on my fermentation and PLEASE correct all of my incorrect terminology. I really want to sound like i know what I'm talking about and I clearly don't Lmao. thanks guys.



also should mention the audience for this vid was not meant to be brewers themselves but i would really appreciate critique regardless.

You hafta use an airlock valve...itll turn to vinegar if you dont...look up "happy jack" if you wanna make it really really good

im using a blow off tube, much better than airlock.needed for such large fermentation.

Cinnamon stick..honeysuckle..little lemon juice if its too sweet, I likely a little tart, happy jack, seriously...makes it like a brandy...cool down the room to slow fermentation...looks good, wild apples?...homegrown I mean....you can only get around 30 proof or 15 percent with bakers yeast, but wild apples have their own...there is a bacteria that will absolutely spoil it to vinegar if you arent careful....I had to toss 15 gallons because I didnt know this....improper venting, has to be sealed up when finished, preferably vaccumed..if you bottle it up sooner, while theres still some slight gas exchange, it will be carbonated...fizzy..but get ALL the old yeast out, all the sediment...happy jack makes it clear and sparkley..see thru, no cloudiness....youre lucky, I dont give my secrets to just anybody lol...stuff is so good ppl will buy you out of your stash...go ahead and start another batch, it wont last long lol..cleanliness...methodical...patience, nice job so far

If you dont watch, youll lose some alcohol...it rises..you needed a larger container..or less brew in it, having brew up around the lid, running out like that, can create a perfect environment for bacteria to take root...if it runs down the sides or anything wipe it off good with everclear or strong isopropyl....soon as it quits working off, or gets very close, filter it very good twice , second time, slow drip it....in a sealed environment if possible...keep it all sterile, and bottle it...u know how to pressure can? Its not nessicary, and kinda complicates it, but im ocd and have done that before...but a vaccumm pump and one way valves works best...just boil your jars first

it all worked out sorta. fermentation kinda slowed down at the end so i mixxed it up a bit which i think introduced oxygen and thus a bit too much acidity.  It's totally drinkable just not my besst.


also managed to break a  15 gal carboy.

I think im going to stick to 5 gal batches atleast in the winter time. too hard to clean the damn 15 gallon demijohns inside

A quick note about applejack. It's a kind of brandy you can make by freeze distilling wine. Leave the wine out in a bucket to freeze, then lift and drain the ice until it loses its color. Discard the ice and save the liquid. Repeat until it no longer freezes overnight. :drunk:

Thank you Andy Hinton...very nice mushroom pic too..good lookin out, happy jack is just the best..dont need fire or a distillation pot..totally legal process and ive made 90 proof with the method...heh..takes time
