Tips for fruiting a colonized APE tray?

So a friend of mine recently gifted me a tray of APE that is already colonized. He’s about to move and didn’t want to fruit them. They’re in a 3x5x9 tray with coco/verm/coffee grounds. It’s been almost a a decade since I’ve tried to cultivate, and when I did, I used jars. So in other words, I’m pretty much new to this. Anyone have any tips on how to get a tray to fruit or what I should do with it? Any help is appreciated.

I'd consider using a shotgun fruiting chamber for fruiting, as well as, casing layer.
