octopus for dinner tonight

i don't know what to call the meal i made tonight, other than damn tasty.

ingredients:



octopus (sliced into chunks/strips)
rice
onion
garlic
vinegar (i used coco vinegar)
soy sauce (i used mushroom soy)
black pepper
salt

you'll need to cook the rice seperately from the octopus. start the rice about 5-10 mins before you start the octopus.

the rice:
put two cups rice and 3 cups water in a medium saucepan. bring to a boil, then reduce heat and simmer with the lid on for around 20 mins, or until rice is to the consistency that you prefer. remove from heat and let it sit covered.

the octopus:

chop however much garlic and onion you want to use and saute it in just enough cooking oil until it browns.

add the salt and pepper. stir it up a bit, then add the octopus.

saute the octopus for about 2 mins, then add the vinegar and soy.

cook the mix for 2 or 3 mins and serve it over the rice.


my meal came out looking really brown, because when i went to add the soy, the loose lid gushed a large amount of soy into the pan. it still tasted great, just looked a little dark.




ps: i wanted to add one thing. do not cook octopus too long. if you cook octopus or squid too long, you'll feel like you are chewing on a tire and probably will not enjoy your meal.

Yeah, the first 5-6 times I tried octopus (in stirfry, as sushi) I hated it, but then I had it grilled Greek style and it was amazingly good. It's all in how you fix it *nod*

I think the rule is, "Cook it for 2 minutes, or cook it for an hour."

I wish I could get my hands on something like that. In my town, everything "fresh" has been previously frozen. I can't get anything decent.
