The 23qt is 6dollars more. Is 23qt too large?

Does 14 pint jars or a variety of stuff.

Can always get a cheap 6L for media work

You definitely want the 23 quart. You can get 10 quarts of grain jars in that or 7 in the 21 quart.

This is a very nice pressure cooker.  I own one of these and it works very nicely for my needs.  Some prefer larger ones, but I don't.  My needs are much more modest.  Some aim for industrial scales.  Others aim for hobbyist scales.  Best to know your goals, then purchase accordingly.

I like my 16qt. Does 7 jars of grain while the 23qt does 3 more but they have to be on their side. Bigger isn’t always better, depending on your needs

My sponsor suggests a stainless steel pressure cooker because aluminum may warp.

Aluminum works fine.  People have been canning in these things for decades.  Granted, if you run it dry it might warp.  So follow the directions and it will never run dry.

The stainless ones are made from thin cheap stainless. Every aluminum PC I've seen is far superior quality from presto to the All American brand.
Theres shitty cheap mirro brand ones that are stainless. They'll warp first.

The presto will also warp ran dry. Don't run it dry.

I just want a aa steralizer..them prices though..

I use a t fal 23 and it does 10 jars. As everyone said know your needs and buy according to that.

MY need is not being annoyed to death by something I have to use regularly, whether it's the rocker being loose when unused and noisy when used or the gaskets needing replaced or two-handed handling or anything.  Only acceptable and likeable solution is All American, upgraded with a sterilizer's toggle.
