The tough part, is that cellulose is a very difficult organic polymer to break down. Do you know of an enzyme that breaks down cellulose easily?

I'll definitely try letting it eat to different stages.

Well, fungi and bacteria make cellulase. I would rather culture the bacteria or fungi that is capable of producing it. Originally, I was looking at bacteria, but was having a lot of difficulty finding a source to buy a strain I know of that can do this. Do you know of a bacteria capable of making it? Perhaps you know one that I don't.

Not off the top of my head. They probably have gmo aspergillus to make cellulase. Bacteria idk

What do you think about pseudomonas fluorescens? It can be cultured on agar, it has a biosafety level of 1, and it should produce pretty good levels of cellulase.

As long as you're not elderly, a newborn, or have aids I don't see a problem growing it.

I feel that this experiment could be expanded at this point. A comparison of the effects on the green (non-roasted) coffee bean, from cellulase producing bacteria vs cellulase producing fungi. I'll start it with the fungi, and then when I get the bacteria in, I'll run a set of tests with bacteria. The bacteria will only cost me $20.

I can get the beans roasted, and do taste tests afterwards.

I've got a high grade coffee company that is supplying me with free coffee beans for these tests. These beans are coming from the highest mountain peak in Jamaica. They are the ones that will be roasting the beans for me as well.
