One, but 2 makes it more sturdy. The foil seems to take a beating from handling the jars.  You know how you like to admire them! :heartpump:

Sart the fourty five minutes after you get a steady hiss. The rocker might jiggle but shouldn't be going crazy. As for the foil, it just adds some protection from mold spores entering your inoculation holes. I keep mine on sort of loose until my jars are about 80%-90% colonized then I take it off.

let the water get boiling then put the jars in and put lid on. If you have the rocker/jiggler valve make sure its off at first...let the PC heat up where steam is constantly coming out the hole...put on the valve(use heat pad to hold) and then keep it on high heat till it jiggles or rocks. From the first jiggle/rocker noise you start timing. (100minutes for WBS)

I am unsure about times for BRF, but with a PC i would imagine a grain is used.

i forgot to say..when it starts to jiggle then turn the heat down to just below medium (will vary per stove) you want it to have a light rock...so if you stomp on the ground next to stove it will hiss...something along those lines...
