Pad Thai

I found a great pad thai recipe and it tastes pretty good! now there's no need for us to go to a thai restaurant here since i can make the stuff on my own :grin: hope you guys like...tell me if u make it and give some feedback :smile:

Ingredients
300-400 grams chantaboon rice noodles (you can find this at an oriental store. soak the noodles for about 45mins to 1hr in water at room temperature)
6 cloves of garlic, minced
?-1 full shallot, minced
300 grams diced chicken
1/4th cup chives, minced
2 teaspoons tamarind concentrate (add 5 teaspoons water to this)
1/4th cup sugar
1/4th cup patis a.k.a. fish sauce
? cup grounded roasted peanuts
1 cup mung bean sprouts
1 egg, beaten
? cup of firm tofu cut into small squares (optional)
some cooking oil

- in a small bowl, mix the tamarind concentrate/water, patis, sugar. Set aside.
- heat some oil in a wok. add the minced garlic and shallots and fry just before it gets browned.
- add diced chicken. cook till the chicken is done.
- add chopped chives and grounded peanuts. mix well.
- add the rice noodles and keep stiring everything around.
- add the patis/sugar/tamarind mixture to the wok. stir around so all the noodles get "coated" by this sauce.
- push the noodles to the side of the wok and add the beaten egg. scramble the eggs till they're done and mix into the noodles.

there you have it...pad thai. total cooking time from chopping up ingredients till the end is about 40-50 mins. garnish with some roasted peanuts and some lemon :smile:

I have a question about mung bean sprouts. Can you just buy a dry bag of mung beans and sprout them yourself? Which color mung bean is suitable or are they all about the same? There is an oriental grocery store in my area, but their freshness quality is lacking.

Trader Joes has lots of great sauces.. The PadThai sauce in a jar kicks ass. So does the Masala sauce.

Some day Ill try to make the sauce from scratch.

i'm not sure regarding sprouting your own mung beans...you could try, the colour of the mung beans that you can get at asian stores are usually an olive green colour.

just buy some at the local grocery...i thought i wouldn't be able to find any here but surprisingly, even the small grocery stores sell 300gram bags of the stuff for ?1.50. more expensive than teh states but thankfully it's available :smile:

cool, I have a 1 lb bag in my pantry right now. Not sure how I'd go about sprouting it though.

hmmm, my pad thai pretty much is the same ingredients, just tastes nowhere nearly as good as the local restaurants :frown:  i use shrimp as opposed to chicken, thai chilli peppers (love mine extra extra spicy) and add a wedge of lime

Sounds lucious boO- , but you forgot the MSG! haha and you forgot a picture for me to drool over. I'm a sucker for a good padthai. The difference in a good or bad padthai comes down to the kind of tamarind you get, I've seen some markets with really horrible tamarind.

This is pretty good. First time using a wok. Not sure had a few differences forgot the bean sprouts!
