canning lids, quick question

does it matter if i flip the lids of my ball 1/2 pint jars so the rubber faces the sky or not?

I was wondering the same thing... How does the lid then form an airtight seal?? I put mine on rubber down.. it seemed logical, no??

you dont want/need it air tight...people steam cups with just foil over them....some air exchange is good!

Leave lids seal down -hard to loosen lids when needed for moisture control in jars?
Put lids seal up-easier opening jars good for adjusting moisture content and better air exchange?

Do like I did leave seal down on your first try and you will quickly do the next batch seal up!!!!!

Putting rubber up makes it so you can have a little kind of humidity control within your jars. If you want some air exchange you unscrew the lid a little and it lets some humidity out or if you need to keep it in screw the lid tighter and creates a completely air tight seal. I see this theory as pointless though. Just be patient and give it time to colonize. I put mine on rubber down along with the tinfoil to make sure no contams are getting in. Nothings hurting my precious jars.

Here lately, I've been having trouble with my jars sucking in a big bunch of air when I pealed the tape back to inject. I left the lids loose and all, but still had the problem. After asking here, I turned the lid over, and ran a set of jars with no problems. I'll be leaving the lid upside down from now on.

if your jars are sucking air with tape over the innoculation holes you may find yourself with a stalling problem later...
