Preparing oyster mushrooms for sale

For those of you that sell mushrooms, I'm just wondering what you guys do to prepare your harvest for sale? Do you cut the substrate off the bottom of the harvested shrooms or just leave it as is? Do you remove any aborts/mini shrooms that are attached to the cluster of mushrooms?

make it look as good as possible. if theres any dirt on the cap you can brush it off with a paint brush.

Well if no one wants chime in I will give ya my 5c :wink:

My clusters don't have dirt on them, and i sell them just as they are, perfect!

The base of the clusters are of course a solid mass of the mushroom stipes all conglomerated together as they all push from a single point, and I have addressed concerns over edibility and quality in the base of the clusters by advising what my chefs do, who chop that part up more finely than the rest of the cluster to compensate for the slightly more tough texture. They love the clusters as they are beautiful, and the base of the cluster is just as tasty as the rest. The only part they throw away is the very centre of the base of the cluster, where the mushrooms start pushing through. That little bit is very tough and no good except for stocks or soups I would think.

Plus side for me is I dont lose any saleable mass, and my presentation is done for me by nature.. I love mushrooms!

Does anyone want to compare sizes? I'm getting 600 - 700 gram clusters at the moment, which are a little too big actually!

Thanks for the detailed response man. Do you cut your clusters from the substrate or twist and pull them off? I do the latter and there's always some substrate stuck to them

Hello! I'm still learning, and I have learned a lot from this site and its contributors, so it really is my pleasure to be able to share what I have found.

I make holes less than 1cm in my production blocks from which the clusters grow.

When the mushrooms are ready I literally cup them in my hand and pull down gently(no need to twist), which is enough for the tough little growth point(and therefore the whole cluster) to break off. 

I've only ever had substrate stuck to the mush when fruiting off an enlarged exposed area. Then the twist and shout method works to get the fruit off, but sometimes damages the blocks.

I'll try to get a pic to show what I mean.
