What are some good sterile practices while casing?

Once you get to the casing stage sterility is less important. Your substrate should already be 100% colonized and can fight off most invaders. As far as your casing go it doesnt need to be sterile, some do some dont, I dont, infact peat/verm doesnt even "HAVE" to be pasturized. Its not a bad idea to pasturize but a sterile casing is not needed.

well my foaf always wears latex gloves and sprays down his clean work area with lysol before he cases. he also ties back his hair and makes sure he is clean.
he microwaves his casing mixture for about 10 minutes, then gives it a half hour to cool down
then he makes his casings
no contam problems so far

pastuerizing I think is the most sterile way to make a casing

Pasturizing = holding your casing or what ever your pasturizing at a temp between 160 - 180 for an hour. kills off the bad germs but leaves the good ones. Mushrooms are aided by certain bacteria left unharmed by pasturization.

Microflora: Recent studies have demonstrated the importance of beneficial bacteria in the casing layer. High levels of bacteria such as Pseudomonas putida result in increased primordia formation, earlier cropping and higher yields. During the casing colonization period these beneficial bacteria are stimulated by the metabolic gases that build up in the substrate and diffuse through the casing. In fact, dense casing layer and deep casing layers generally yield more mushrooms because they allow slow diffusion. It is desirable therefore to build up carbon dioxide and other gases prior to primordia formation.

So pretty much if im just using verm cook that in an oven for the temp and time that you suggested.
One more question to add to this, im thinking of just leaving my substrate in the cake since it is just my first time growing. My cakes are 13 days into colinization but the one step i did forget is the top layer of verm. Now i did take extra precautions when preparing my jars so even without that layer of verm most of my jars seem to be coming out fine. When it comes time to tap them out though is there anything i should do since i did forget that layer or just tap them out onto their lid and put them into their aquarium?

Nope, nothing special just tap them out on their lids.. you would have had to scrape off the verm on top so your one step ahead of the game.
