Outdoor wood fired pizza oven. 12

I'm building a pizza oven. Here is where I'll post pics as I go. I'll be looking for anybody to throw ideas questions or answers in this thread. Slabs laid support wall are almost done.
I have a trade background but not in bricklaying. What could possibly go wrong.

Concrete for the base slab and also for the oven support slab and polished concrete work area.
Old red bricks for the oven and the fire pit.
I'll post hand drawn plans with the next installment. It may make more sense then.

I'd love to see it. I have a brick forewall that needs to come down and I've been thinking about trying to recycle them for a brick oven.

Very rough sketch of plans. The rest is in my head.
Polished concrete work area with basin. Next to raised pizza oven on hearth with wood storage underneath. Next to a fire pit slash BBQ box.


So far so good. All foundation brickwork done. Next is slab for pizza oven recessed into brick.
After that I'll start working on the finished brickwork across the front....brick arches.....we will see.

Not sure yet. I've actually never used one. Apparently if you build them right they stay hot for 12 hours plus. The plan is to cook pizza then after woods you can throw roasts, slow cooked tagine or crock pot meals in there. Also really good for bread and drying fruits.
I may convert it to a smoker on occasion also.

After much research and a few valued opinions the old red clay filled bricks should be fine.
Unless you're heating your oven to over 1000 degrees which is kiln like Temps they shouldn't crumble.
I've seen photos of 20 yo PO built with them that are fine.
If you punch whether or not you need proper fire bricks into Google....you will lose a day and be no closer.

It would be easy but expensive for me to get the specialised bricks. All the research I've done leads me to believe that unless using the oven for commercial purposes or for extra High heat they just aren't needed.
There is hardly.going to be any groups out there to go into bat for the secondhand bricks because there's no money in it. I don't just buy stuff because it's been marketed better.
These bricks have a higher than usual clay content have been fired above 1400 which can be told by there absorbency.
I used to be a solid renderer.

Nothing like the taste that an open fire gives you .
I reckon I'll be using the fire pit more often than the oven. I'm planing on making a drop in grill plate.

As for my experience: limited, although I've played with fire and bricks (and natural stone, and cinder blocks) quite a bit over the years, plus there's quite a bit of knowledge in the family on related topics as my mom works with ceramics (art) and my dad has always modified and maintenanced pottery ovens for this purpose (knowledge tends to spill over since we discuss everything in depth). Okay, so there's a few concerns that I have. Firstly, the bricks may stand up against the heating, but if you use regular cement, it WILL be destroyed. Thirdly, it's probably all going to be fine if everything remains cracker dry. However, your oven is outside and the bricks will absorb moisture. Upon heating the oven, the water will vaporize and this may (probably will) crack the bricks. The only way around this is to either keep the oven cracker dry (impractical) or fire it for an extended period (a couple of hours) at relatively low temperature (say, 150C) to allow the water to evaporate in a controlled manner (equally impractical). Fourthly, a red brick is not the same as a red brick. Bricks differ in composition and firing temperature. I don't know the different words in English (not a native speaker, sorry), but around here, we have bricks fired at high heat that are denser and a lot tougher than regular bricks. The former are usually used for paving roads, while the latter are for general construction. The general construction bricks will not have a long lifetime in your oven.
All considered, the moisture and the cement issues would be at the top of my list to think through thoroughly before actually committing to the build.
If I were to build something like this, I'd read up a lot on different kinds of bricks, water absorbency and the heat distribution of a wood-fueled oven. There's loads of good information out there and by the looks of it, you're already on the right track. Also study construction and materials of actual pizza ovens, as this is a well-understood craft and there's no use in reinventing the wheel (or listen to goddamn knowitalls like myself ) Whatever you do, think the materials and construction through, as it would be a shame to put in all the effort of building an oven like yours and then having to demolish it again after 2 months.

Thank for the response. I will definitely be using the proper heat resistant mortar so tick that one. I have thought about the fact that there will be certain points of significant heat difference and it does concern me. I think with proper use I may be able to mediate the risks.
Correct a red brick is not a red brick. The bricks I have sourced are what's known here as old reds, Hallett, they are over 50 years old very dense and have a high clay content....they are known to be used in oven and firepit settings here. Your English is better than mine btw.
Now to the moisture. I've researched the way to cure the oven post construction by slowly lighting larger first over a week. I had not however given enough thought to moisture ingress over time.
I'm either going to render the outside of the dome with a cement vermiculite mixture and potentially seal it...though that will be tough. Or I will brick form around the completed dome and literally pour in the cement verm mixture to entomb it...once that's done i could tile the top..... Food for thought.

perhaps you could line the inside of the oven and chimney with some sort of material just for an extra layer of protection? There is many options, this is just an example as well as this posting is just an idea.

Yep. Plan to pave out the front of the structure...maybe using the same bricks...definitely circular probably a spiral. Then raised bed down the fence for pizza herby type things.
There will be fruit trees running down the other fence with passion fruit vines to cover.
I will be looking to add a creeper of some type to the structure to try and blend it in....open for suggestions.

Exploding bricks sounds like it'd be something on 1000 ways to die. I could definitely see people using rocks or bricks not intended for high temperatures accidentally letting the fire get to hot and cracking that shit up. It's really hard to judge the temperature of fire, let alone fire in an oven. There's hot, there's fucking hot, and there's omg fucking hot and little distinction between.
Eh. I'm curious, how did you build your arches? Did you measure and cut the upper bricks beforehand or did you lay the arch and then figure out how to deal with the other bricks?

Usually not; usually, bricks will just crack, flake and fall apart. But anyone who has built a fire surrounded by rocks (particularly damp ones) knows that rocks can indeed explode quite violently. I've never seen this happen with bricks, although they can make some 'interesting' sounds for sure. Generally, the more compact and tough a rock or brick is, the more violently it will disintegrate - if it does, of course.

I basically eyeballed it as I went....they are the brick ends showing in the arch so uniform in size. In one of the shots you can see the plastic pallet spacers I used as forms.
You can always adjust the size of the perps to make it fit.
Because they aren't spanning much it was easier than I thought it was going to be. Still defy my eye and I was certainly nervous pulling out the form.

I'm going to insert a high grade high temp thermometer in the front of the oven and also invest in an infrared temp sensor. Apparently 2 must do.

Third arch completed. Second story slab laid and finished in the dark.
Next is work area slab. I plan on using white cement and brick sand coloured with black oxide into which I will embed real Opal chips and rocks with Opal seams collected from cooper Pedy. I think the white against black will pop when sand back and polished. It will also have a metal basin sunk into the concrete replete with water supplied by head pressure from a recently installed rainwater tank.
So far so good but I am struggling to find bulk verm?which I plan to use as insulation underneath and around the oven.

Fun and functionality. We are in a 2 story house with a kitchen upstairs. Hopefully we will be able to do alot of cooking outside during the warmer months and not super heat the house. Just for friends and family.
Thanks I'm dodging weather and work pinching a few hours when I can.
I can only get it in 5lts bags locally and it's stupid expensive. I don't want to compromise so I'll have to do a drive to get 100 lts looks like.

I appreciate your advice but I've been able to source some verm and by all reports it's one of the best mediums you can use. Its for the outside of dome both top and bottom.
There are some pretty good formulas to use for calculating thermal mass and how it applies to heating, retaining and insulating.
Nutshell plan. I have base slab of concrete bout 100 mm Directly under oven there's going to be 80mm of verm underneath about 30 mm of packing concrete. Then the bottom layer of bricks. Outside the dome I'm just going to keep packing it on till I figure there is enough.

So I understand the batting doesn't work in compression. Well, I know vermiculite is used to insulate steel chimney liners so maybe a local chimney sweep/installer would be a contact.

The key is not to compress your insulation actually. Obviously underneath take a fair bit but the outside shell will only be on basically under its own weight. Imagine a brick dome in a brick box that's then filled with verm and capped.

A brick dome has to be a feat in itself. I guess that's like intersecting arches with a shared capstone. Or...

One of my friends is a mason and built this killer fireplace stacking rocks. It was a double arch affair you would like it. What was amazing is that you could feel the heat from it in the kitchen which was off a ways and at an angle. I wonder what heating effects away from your unit you will get you should take a thermometer and move it around. I know you are planning on some kind of temperature control of the oven but I'm thinking about along the sides of your arch for example.
Anyway you are definitely into this project I give you kudos.

Ok so I decided to do the o en before the work area slab for access reasons and so I don't trash it.
Here is the first course with its inch half verm then inch half concrete layer. First verm for insulation then concrete for that little bit more mass.

Let that set for a few days then did this today

So basically did the vertical courses of the oven itself next is the dome. I also have started the outside structure and back filled with verm sand and cement. I just wanted to make sure the inner walls don't try and spread when I do the roof.
After the roof is the door arch. Then the chimney box arches. Then the chimney.

So i did the back and front walls of the oven then coated the whole thing with its first layer of verm.
Now ive started on the front smoke catcher slash tray warmer. The oven itself sits about 1cm off the front boxed section so hopefully it is alowwed to move without cracking.....
One more arch in the front and im almost getting somewhere.

That's cool! However, I've always learned that cement requires moisture in order to harden and hardening it in dry conditions will cause it to be brittle. Perhaps it depends on the kind of cement used, but with regular cement, I only know that when building something, it's best to keep the structure moist (e.g. by spraying it with water a few times over the first few days) in order for the cement to cure properly. I'd be very hesitant to fire the oven yet.

You're absolutely right...the longer you can let it cure from wet the stronger itll be. Its a 4 1 and 1 mix sand,cement,lime.
The oven itself has been up for about a week now.
Ive only lightly fired it and intend on building up very slowly.....your post is hat i needed to pull my head in a bit....i my hold off for.a bit longer...thanks.
With the dome itself there is very little actual mortar id say qaurter barrow at most. They are effectively dry stacked.....but the bottom courses have the normal amount.

Due to the volume of the structure, I think it's a good idea to let it cure or at least two weeks before applying any heat from a fire to it. The cement needs to set and the moisture needs to dissipate from it, otherwise you risk steam bubbles forming and that's probably not good for structural strength
BTW, I love how it has all come together, it looks really great!!

Front smoke catcher brickwork done. On top something similar in shape to range hood up to a circular flue. Still undecided as to what material to use copper or stainless lead the voting.
The roof ive decided is going to be recycled tin fence from the next place i see it....little bit rusty preferably.
i like the idea of the flue and hood being really clean edged and chic against the roughness of the brick and the finish of the roof.
jasmine to be planted right at the back with the hopes it takes hold.
As for the fire....i couldnt wait any longer ive started small and all.seems good.

Another idea would be to concentrate on the cool hood/flue build with solid lines and big rivets that really stand out. IMO the copper and ss will be discolored and grimey in no time and has the potential of pissing you off when ever your cooking and showing off your sweet skills? It would me. Indoor you could most likely get away with that.(Staff cleaning the equipment nightly), High temp black spray,intricate metal fab on the hood? Just opinion,not insult.

If i were to go these finished metals its the discoloration im sort off after....if ive built the smoke catcher right the blackening should happenn out of sight.
Im with you though ive toyed with just building a brick chimney or going matt black metal or render.
Id like to incorporate a bit of rendering into it as its my trade but in running out of excuses.

First meal cooked. Potatoes and Pork belly. Excellent, pork done in 20 minutes potatoes took a smidge longer.
I'm calling the oven cured now. Next firings all the way up to pizza temps.
No cracking or flaking of any type so far.
The top of the dome outside was quite warm to touch when it was cranked up. I expected warmth not heat. I'm losing alot of energy and will need to pack on more insulation. Other than that red gum.flavored food
Photos to come post pizzas.
Though they will also be post tripping so we shall see.

Work area and basin laid and trowel finished.
It has the Opal rocks inlaid which hopefully become obvious when the slabs polished back.
Next roof and flue plus a few more bricks round the fireplace and I'm done withe the structure.....will be paving the front.
Had half a dozen cooks so far from pizza and roast to spuds and meatballs....excellent.
Stays hot for 24 hour plus with a shitty door. Once o am able to seal it I expect 48 hours of heat.

Just do it.
Had meatballs in a tomato and onion ragu yesterday for lunch. Followed by bread ( a first) worked well. Then roast beef and veggies for dinner.
Using the thing effectively is going to be a process. Its all about timing.
Just put an offer on a flue. Have sourced tin s for roof. One more weekend and it'll be weather proof.

I've lost most of my eyelashes. And I burnt my hair....which I cannot afford to be doing.
Its all in the colour of the bricks...the roof starts to go white as the soot burns. Then to test I'm throwing flour on the bricks. Instant black means to hot slowly brown is spot on.
Have made myself a slide for pizza and bread so I'm now Laying them directly on the brick....made a massive difference. Pizza is down in under 3 minutes. Bread in 25.

Picked up a mid century copoer flue for less than scrap value.
Also managed to source some free tin.
Polished concrete has come up well when the sun hits the opal it pops...ill try another shot when its bright.

Would be a specialist job I'm guessing, you know how that first thing tastes a bit weird every time? First billy from a new one, first coffee from a brand spanking kettle... Is it the same with the oven? First meal was good but something a bit funny? Second one shat all over the first in terms of quality? I'm wondering how long you should leave it or if it needs to be cleaned often as that would be a pain in the arse no doubt.

its not that big a deal. Ive found having a little bit of ash left in there gives it more mass when it coals up.
ive emptied it once in 12 plus firings.
its only about a square foot you need to keep clean foe placing the pizzas directly on the brick.
I just clear a space then slap it woth the paddle then mop it with a ...mop.

Atm im still on the natural yoghurt and self raising flour mix. Super simple very quick and its delicious.

Pizza base is simple.
For one fairly large crust: 200g / 7oz white flour ca. 150ml / 5oz lukewarm water ca. 30ml / 1oz olive oil A pinch of salt; try 2g / 1 teaspoon Some instant yeast, again 1 teaspoon is ample

Transfer the crust to a pizza peel or some other flat object that you can shove into the oven and let the pizza slide off of. Put on the sauce and other ingredients as the crust lays on the peel.
Bake the pizza for as long as it takes, which will be around 6 minutes in the magnificent oven of our OP, but in my small electric home oven, it generally takes about 14 minutes at its highest temperature setting (labeled 250C/480F, but it's really significantly lower).
If you find the dough is too sticky/wet after it has rested for the first 10 minutes, you can add some more flour. It needs to be fairly wet/supple though for optimal results; the water content needs to be higher than for most bread.

Thanks for the recipe.
My first big test comes tommorow for new years....we are goimg to be having 50 odd people.
Meatballs in onion and capsicum ragu served in lettuce . Then pizzas with oven fired bread for platters containing smoked goodies and roasted vegetables.
Plus plenty of booze with which ill have to pace myself. Bouncy castle for the kids which im looking foward to a shot on also.

Thats it.
Just youghurt and sr flour usually in eqaul weights seems about right.
Just mix till it becomes a workable dough cut of a portion roll it and use it straight away with no need for prooving. Roll it thin because it really puffs up when cooked.

The previous pictures are as finished as it is.
Yes ive now had 20 plus firings with varying success. The oven itself is still 100 percent together and working properly but thw learning proccess of how to use it is ongoing.
So far ive cooked.
Roasts ( All types) Vegetables "" Breads Meatballs. Did a stew when pissed. And ofcourse pizza.
It wirked really well on new years and easily pumped out enough food for 40 with plenty of room and time to spare. When you can cook a family size pizza in 3 minutes iy all becomes worth it.
Next on my list is getting the bread right. Smoking fish somehow.
And then firing some chess pieces that ima going to make out of potters clay....for the inlaid chessboard.

Is this only used for cooking or is it ever used as an outdoor fireplace like a chimenea?

Here is the fire and grill area. Throws quite a bit of heat all around the paved area.
When both the oven and the grill are cranking its super toastie.
Also notice the smiley face in the bricks...at night it lights up like a jack o lantern when the fires cranking.

I saw the previous post about the smiley face but didn't notice exactly where it was. Looks like a nice place to hang out on cool evenings.
Were you able to fire the chess pieces in the oven itself?
I'd love to build a wood fired pizza oven or actually a whole outdoos kitchen but would probably try using cob instead of bricks.

Everybody that comes seems to naturally gravitate towards it...I assumed that it would be a bit boring to stare at a pile of bricks for a night but it has become quite the entertaining area....especially when its fired up.
No I spoke to the guy at the clay shop and he recommends firing the pieces at above 1000 degrees which is outside of my capabilities. I was able to chuck them in the oven after a cook the other night which has taken their pre kiln drying time from 2 weeks to less than 1.
They do look cool. What are they made of?

I wondered if the oven would get hot enough to fire the clay pieces. I don't know how long it took you to make them but I'd be tempted to try it anyway with an extra one or something similar to them. If they were not left out in the rain they might last a while even if they aren't fired as hot as they should be but I could be wrong.
The pizza ovens I linked to were probably made from cob which is basically mud and straw. I think they normally need some kind of roof over them to protect them from rain.

1st set took me an evening....they are more about function than form.
I did think about a test fire and may still try. ill be glazing the pieces and firing a second time so hopefully they are both water tight and a bit more rugged.
Yes the roof would be key I would imagine as the structure must remain dry or you risk severe cracking. Also I highly recommend a smoke catcher to make it more user friendly.
Make one, its worth it.

I was going to make something specifically for it but when i saw the stainless mesh just sittimg at a winery i asked nicely and they gave it to me. Its high grade stainless which isnt cheap.
Then had a fabrication shop bend it for me when i went to pay he said a beer was fine.
So it cost me nothing and works as well as it could.

If you meam in the oven itself...not yet but smokimg something is on the cards.
I have done a schnapper over the grill though somebody brought it ober for new years....turned out really well.
I have access to old barrels and oak inner staves that have been soaked in red wine....these give amazing flavour to the things ive been cooking worled really well with that fish.

Big salmon with some delicious things stuffed in it might go well in the oven, I imagine some of the fish you need to be gentle with would be tricky in there. I've had some smoked fish before but it was over-smoked (I think that's a thing). He left it in there way too long and it tasted like absolute garbage, maybe smoked stuff is an acquired taste, it's not a common way of cooking around here and the circles I run with. 
Crumbed, grilled, fried, BBQ'd or on the webber are the ways I've come across but only once or twice smoked. Are you into seafood pizza? I love seafood and pizza but I can't do both together.

I love seafood of all types and as you know have ready acces to fish where i am. I did set up a smomer years ago made out airconditioner ducts.
I find there is a big difference in the flavour between cold and hot smoked....i much prefer coldsmoked fish.
In the oven i am probably going to be restricted to hot smoking unless i get really creative.
Smoked fish sandwiches are great.
Sefood pies and pizzas have never really worked for me either....beat to keep fish simple imo.

Natural. Lemon or with a splash of nice white wine. Though we have got pretty adventurousbefore and after trying quite a few different flavours
Ive been spoilt by coffin bay oysters and have a contact. He swings through every couple of month with sacks of seconds( odd shapes) i get them at ridiculous prices and they were only harvested the day before.
Only problem is im now an oyster snob and cant eat them from anywhere else.

I've spent some time camping and fishing in Coffin Bay, you're right as I haven't come across a better oyster anywhere. I can't bring myself to buy them when we go out, natural all the way. Best times sitting in the park in Coffin Bay with a bag of oysters from the deli, a lemon and a shucking knife and just getting messy as fuck.
So you get them in those hessian bags then? Lucky bastard. I hear there are plenty for the taking on the man made rock pool wall at Edithburgh but probably not as good as CB. Don't ever buy seafood sauce, 50% tomato sauce + 50% good mayonnaise mixed together = best seafood sauce ever.

Coopers makes the best seafood sauce.....pale ale.
Used too be sacks but now they come in Styrofoam boxes.
Sounds like bs but I found a tiny misshapen pearl in one of them once...apparently a very rare occurrence.
I stuck a kitchen knife straight down into the webbing of my fingers last year....last oyster of the night after dozens and dozens was pissed and the blood was like it was from a tap 5 or so stiches... got a shucking knife for Christmas.

Right time for an update. The one I was hesitantly looking foward too the most.


I'm going to be honest and tell you about the cold sweats I woke up during the build of this. From explosions to implosions, people being crushed and meals not served I'd dreamed em all. I deep down was worried about the bricks I chose and my ability to construct a viable oven.
Turns out I've made a keeper.
After what would be 20 plus firings ranging in exploratory too oh shit it's held up fantastically.
After crawling in today for my first close up check the bricks show no sign of deterioration whatsoever.
I've a few little cracks around the top course of my support wall but all in all the design has held up against any structural problems.
If you are thinking about building one of these Imo and now ime you should have no problems with properly sourced and researched red bricks.
Tonight's dinner pork roast with veggies sweet potatoes and bread from the oven.

The board has arrived and is beautiful. It's been used a couple of times already for cheeses. Photo of it in use at the oven when its next all happening.

Update for a couple of reasons.
1: Its still in A1 condition after many cooks now im getting much better at using it also...less short timeframe cooking and more extended smoky cooking seems to have takien away the risk of burning or under/over cooking.
2: Im 90 percent sure that making these is going to be my major part of my job (vintages and cellar doors to supplement) for a few years moving foward.
I have got 2 lined up qouted and confirmed already just through word of mouth...i briefly put it on Gumtree but had to take it down because i got hammered...so interest seemingly is out there.
I am after honest feedback on what you guys think its worth(The oven)....just by looking at it what wouldnt shock you when somebody gave you the cost.......Please be honest no offense possible.

Still going strong.) Starting to soften into the garden now.
Much better at getting the temps right for the different meals...took awhile to learn...few under and overcooks to refine it. Structure is still A1 and is not going anywhere in my lifetime:)
