Atm im still on the natural yoghurt and self raising flour mix. Super simple very quick and its delicious.
Im still on a steep learning curve when it comes to breads. It takes commitment to do it properly.

Pizza base is simple.
For one fairly large crust: 200g / 7oz white flour ca. 150ml / 5oz lukewarm water ca. 30ml / 1oz olive oil A pinch of salt; try 2g / 1 teaspoon Some instant yeast, again 1 teaspoon is ample
Mix ingredients, start with mixing the flour, salt and yeast in a bowl that is ca. 3-4 times the volume of the ingredients. Add olive oil, then add water. Mix into a homogeneous mass. Cover the bowl with a plate or so and let rest for 10 minutes. Knead briefly (15 seconds or so) by pulling a bit of dough and pushing it back into the rest of the mass. Repeat the waiting - kneading cycle another 3 times.
Cover again and let the dough rise in a warm (90F) location until the dough has at least doubled. Rising at lower temperatures works fine as well, but it just takes a little longer. After letting it rise, knead the air out of the dough. You'll find it's extremely soft and supple at this point.
Liberally sprinkle your workspace and the ball of dough with flour. Flatten the dough and roll it out into a thin (1/4 inch or so) crust using a rolling pin. Transfer the crust to a pizza peel or some other flat object that you can shove into the oven and let the pizza slide off of. Put on the sauce and other ingredients as the crust lays on the peel.
Bake the pizza for as long as it takes, which will be around 6 minutes in the magnificent oven of our OP, but in my small electric home oven, it generally takes about 14 minutes at its highest temperature setting (labeled 250C/480F, but it's really significantly lower).
If you find the dough is too sticky/wet after it has rested for the first 10 minutes, you can add some more flour. It needs to be fairly wet/supple though for optimal results; the water content needs to be higher than for most bread.

Thanks for the recipe.
My first big test comes tommorow for new years....we are goimg to be having 50 odd people.
Meatballs in onion and capsicum ragu served in lettuce . Then pizzas with oven fired bread for platters containing smoked goodies and roasted vegetables.
Plus plenty of booze with which ill have to pace myself. Bouncy castle for the kids which im looking foward to a shot on also.
Drum roll please.....................done.
Ill compose a post that has all the pics start to finish soonish.

Thats it.
Just youghurt and sr flour usually in eqaul weights seems about right.
Just mix till it becomes a workable dough cut of a portion roll it and use it straight away with no need for prooving. Roll it thin because it really puffs up when cooked.
