Chwyn,Thank you for the offer. MyColorado has one of my cultures , if he can revive it. I would hope that is not true for king oyster, I have some on slants that will be revived at some point.

How many barriers are there to entry in the gourmet/medicinal market? I live in the southern USA and am considering ways to quit my 9-5 for something i actually give a shit about, but I do not want to be a (full time) drug dealer.... What advice would you give a potential new farmer?

Keep your job untill your hobby takes over. Starting out takes a TON of planning and research. You will also want to decide on selling at farmers markets or selling directly to chefs. Its tough to make connections at first but you can meet people at farmers markets. Make sure to check your competition.
As for building a farm go with cheap and simple. I can type you an entire book about trying to get into the mushroom buisness but I would prefer to answer more specific questions.

When selling to chefs or at farmers markets, do I need to get special licenses, certifications, etc? How hard are they to get? I mostly want to know what my target buyer is/could be and how many hoops do i have to jump through to be able to sell to them.
And I should not have said farmer, I think that was the wrong word. I already have a nice big (giant, really) flowhood, and all the basic materials since i've been growing actives for a couple years now. I dont intend to buy farming real estate or anything, i just want to keep doing what I'm doing but branch out so I can have more (read: legitimate) business

Check with your state ag dept. on regulations and your local health dept. for anything they might require. Typically, most customers such as grocers and restaurants will require GAP Certification (Good Agricultural Practices) which is often handled by the state ag dept. In my state you have to pay for the agent's travel to your location as well as the cert fee.

Nebrodensis bags are at 95% (13 days). I figured they would have colonized a tad quicker but not terrible, considering the spawn ratio. If any nebro or king growers out there want to chime in with some insights or tips it would be awesome!

I just read growth parameters somewhere, can't remember. I do think it recommended right at freezing to initiate. Really long consolidation at cold temps. I'll maybe remember.

I just looked at the bags and the 2 of the four that are 99% are throwing healthy looking pin clusters all over the top. Not sure what thats all about...they've been at about 70F for the past 14 days. Spawn looked and smelled clean. Can't get a good pic or a very good look for that matter.

Harvested 2 shiitake blocks tonight! First time I've weighed them. Couldn't believe one block had 2.5# and the second 2.25#. Holy smokes that's a lot if shiitake.

Anthe, just sawdust and soy hulls. I need to weigh my blocks. They are probably larger than most. I've found 20% supplement is bunk, at least with soy hulls. I've been running 30% + with a qrt of spawn per bag. So close to 40% total. Pretty much GrOwer and Drake recipe.

soy hulls, I've only heard good things when discussed in the cultivation context. Those would be some very serious yields for a 5- 6 lb block, but you've got me thinking about changing things up. are you only doing this for your shiitake or also oysters?
