IMHO I would look at getting a hygrometer from a cigar store. One that is made for a humidor. From my experience cigar aficionados are crazy about getting the right temp and humidity. Good cigars are quite expensive. So storing them for any length of time requires lot of control. Some guys keep cigars in their humidors for a couple years or more. There are many suppliers on the net with many options. Going analog would be my choice.

how long should I be running my barrel steamer? I ran it for 24hrs the first time and I had to toss 12 bags out of that run so far... I added a digital bbq thermometer with probes to monitor temps for the 2nd run.. just inoculated the 2nd round of bags, hopefully I don't have to toss a bunch of them too

How much substrate and what size bags are you using and what temp you got it set to? 24hrs should be more then sufficient to sterilize.
I have had success from 18-24 hours, I have been running mine for 24 hrs @ 95°c for a while now but in light of some recent info it's probably overkill and might be beneficial to do shorter runs.
What kind of contam you got? Before or after inoculation?

There's too many variables for any of us to answer that like how big is your heating element, how much water is in there, how packed is the barrel, etc. You'll just have to get a probe in there and figure it out.
No matter what though I'm sure 24 hours was way more than enough and I doubt that's why you have contaminated bags

test run was 36 5lb blocks, they looked alright when I pulled them out... I've been using my 75x's to sterilize substrate blocks for the last year and have had no problems.. it just takes too much work spread out over the week, need to figure out the issue soon.. so I don't fuck up too many more bags

I got probes hooked up now, a 2000w element, and wasn't completely full... got 4-6in of water in it

So many variables... Some pics might help understand the situation.
Is your barrel insulated?
I would put money on contam coming from the inoculum but it's not impossible for a steam run to have issues.

insulation is the next step.. pretty sure that's my problem, part of my bags are at 232°F-252°F(bottom) and the top bags are at 155°F after 6hrs... one thing I did this round was cut back on the water in my bags, my math was off by 250ml per bag the first round and I think that may have played a part? could have been my inoculant too I guess, but I've not seen anything go green after inoculation since I started growing gourmets until now

What are your sub ratios? Should be about 880g dry goods + 1320g water.
Insulation will definitely help. Areas of the vessel may never reach proper temps without insulation.
My drum is usually reaching 96c at the top in 6hrs, using a sightly smaller element.

900g masters mix to 1350g water is what I'm using now, I had like a cup of water too much before... hell I still haven't hit 180°F in the top bags, at 172°F now.... so I'll start my 8hr timer once the top bags hit 180°F as recommended by Ayeplus

I definitely need to insulate barrel... top bags still haven't reached 180°F, hopefully it'll be around 80°F today so the temps in the top bags will get up to 180°F eventually🤦🤦

I had contam issues on a full barrel until I insulated my barrel...

that's my next step... didn't really plan things out too well, the barrel was thrown together in the spur of the moment with shit I had from previous failed attempts.. will have to go buy some wood and spray foam or some shit

Get a 4'x8' sheet of 2" foam board. Measure the diameter of your barrel, cut the sheet to length and height. Score it vertically every 4" like a kerf cut in woodworking. Now it can roll like a tube. Roll it around, tape it in place. Use the excess to make a top. Use spray foam in the seams/kerfs.

Figured i’d just jump in here since me and lefty been pm’ing about it.
100% its your lack of insulation. Get that thing all cozy and you’ll probably be able to pull off 18 hr runs.
Water heater wraps should work, make a piece for the lid too, You can also throw a wool blanket over the whole thing and wrap it up. But that 2” rigid foam is def nice and high r value,
I used both.. but i never got a picture of it finished. Here was the first incarnation similar to what dave is suggesting:
 Btw i used an 1850 watt and did 28 12 lb blocks fine till the heating element started to rust out and the temps dipped.
Building a new unit with a seperate propane/electric powered steam generator pumped into a aluminum pan rack. I’ll be able to start on propane and finish on electric, then I can disconnect the steam generator while the unit cools, and start steaming another batch, this will allow me To double production...
I’m limited on electrical (its a rental so no major upgrades and propane is cheaper anyways. Might also be able to shave some time off the heating up period and get to sterilization temps sooner

I’m building a laminar flow unit, simple plywood plenum to house filter and support top-mounted blower.
Question, should I treat or seal the wood (inside) after completing? Current thoughts were to sand all over, vac and wipe surfaces, seal with a quick couple coats of PVA + water but not wetting too much to cause distortion.
Bad idea, wasted effort, better ideas? I’m wary of clogging my expensive HEPA with wood dust so want to kind of lock it in while providing a bit more durability
