Vacation during colonization>Can you colonize for too long?

I am an amatuer mycologist and innoculated some jars about 3 weeks ago...Most of them took 2 weeks to show signs of growth and are about 1/4 colonized right now. I'm heaeded to Amsterdam in 2 weeks and I'm afraid my cakes will be ready just before I leave. Is it ok to leave them in the jars for a while after they are ready? I'll be gone for 9 days. Could I just lower the temperature to slow everything down? Any and all suggestions welcome!!

put them in the fridge they will be fine.

Yes, If you place them in a cool place, the growth will slow right down. If their nearly, but not quite ready when you are about to go to dam, place them into a fridge and that should keep them dormant
untill you return, then warm them up, colonise a bit, then fruit.
