First one - appears to be the  edible European Macrolepiota procera, though it seems you're finding them near other mushrooms of European descent which is promising, I'd wait for a trusted identifier just to be safe, as the Australian Macrolepiotas aren't confirmed as edible (though this TI says they are), as well as that they're easy to confuse with  poisonous Chlorophyllum mushrooms.

Second one - Yes, enjoy! Lactarius deliciosus. Saffron milk caps will stain green when handled and exude an orange red "milk" when cut/broken. There are a few native species (more likely to be encountered in native woodland than pine plantations) that have a passing resemblance but tend to be smaller and do not both stain green and exude the "saffron milk".

Third one -  Boletus edulis, a prized edible, though it looks like the bugs have a head start on them for you. Keep an eye out for Slippery Jacks (Suillus luteus) as well, another bolete which though not as good as porcini when fresh they're quite good IMO as a dried porcini substitute for flavour in soups, stews and sauces.

The last one looks more like Leccinum scabrum or something similar. Notice the scaly stalk. They are also a pretty good edible, not sure about the edibility of finds from Australia. Boletus edulis will have reticulation on the stalk, a brown/tan cap, and will not bruise when cut.

I find Leccinum scabrum to be mediocre at best, not much flavour to talk about, and it easily turns into goo when fried.

But people obviously have differing opinions of many edibles. I'm rather picky in that sense. Vacating in Poland at the moment, I found
a supermarket selling dried Imleria badia ("Bay bolete"), which I'm curious to try. Apparently favoured by many, I've never collected
it for culinary purposes myself, as I spend most of my edible hunting sessions looking for Porcini, Chanterelles and Trumpets.

I've never eaten a birch bolete myself. They never really looked or smelled that appetizing to me. I tend to stick to chants, lobsters, porcini, and morels.
