Pork with ramen stir fry

I just got bored and hungry and threw this together. I actually remembered to take pics. I kept track of roughly how much of everything I used, too. This is delicious and only took about 15 minutes to make. Sorry my pics aren't the best, I took all the pics while cooking and it's a quick process.
Crap you'll need:
Ramen noodles Pork loin Veggie or canola oil (olive oil isn't gonna cut it here, folks.) Soy sauce Oyster sauce Sesame oil Spicy brown mustard Sugar Cinnamon powder Salt Pepper Garlic (I have minced garlic, fresh would be better of course.) A big-ass, heavy 12" skillet or wok. Preferably stainless steel. A pot A colander

First, do your prep work. Cut up all your meat and veggies very thin. You're going to be cooking quickly over high heat so you need surface area. I used onion and green bell pepper, but you could throw in broccoli, carrots, snow peas, water chestnuts, whatever you have really.
I used pork and just seasoned it with salt, pepper and a touch of garlic powder. You can also sub chicken or beef for the pork. It's all up to you.

Save yourself some trouble and make up your sauce after your veggies are cut. All measurements are estimates. For 2 packs of ramen, use 1.5 to 2 tbsp soy sauce, 2/3 to 1 tbsp oyster sauce, 1 tsp mustard, 1/2 tsp cinnamon, 1 tsp sugar, a dash of sesame oil and about 1/3 of a seasoning packet from the ramen. Whisk it all up with a fork and set it aside.
Go ahead and boil your ramen for 2 minutes then drain it. Throw the rest of the seasoning packets in the water with it. Don't go over. You want them undercooked.

Once you're done with that, go ahead and get your big-ass pan hot as fuck. Throw in a good bit of canola or veggie oil while it's heating. Don't rush it, you need the whole thing good and hot.
Once the oil just starts to smoke you're ready to move into action. You really won't stop moving this whole time (hence the missing first pic) so be quick. Keep everything moving in the pan the whole time. It's called a stir fry cause you stir it the whole time.
First, toss in onions and peppers. A dash of salt on them and start stirring/tossing. I missed the pic here cause you only need about 30-40 seconds, or until the peppers start to blister and the onion starts to get some color. Once they are looking right, toss in the meat (or don't if you want a veggie version) and keep tossing until it's done.

Once your meat looks good, dump it all into a bowl. Don't wipe the pan out or anything, there's good stuff in there we're gonna mostly get back.

Now throw a little more oil in your pan and wait just a few seconds to let it heat. Add a touch of sesame oil. Once you just see smoke again, toss in the noodles. As with everything else, keep stirring the whole time.

Once the noodles have a little color, go ahead and throw the meat and veggies back in. Stir or toss really quickly then go ahead and add in your sauce.

Keep cooking for another 30 seconds, keeping it moving the whole time and you're done. Pour out into a bowl and serve.

You should totally cook me some now, looks delicious.
Personally I would add spinach because I love spinach in my ramen.
Do the noodles get that semi crunchy, buttery quality that pan fried noodles from Chinese take out have? I love pan fried noodles, I don't think the noodles they use are ramen though..looks similar though

They tend to use rice noodles, but yeah they get crunchy. That's why you undercook them.
