Turkey roaster for jar pasteurization

I'm curious if people use adjustable turkey roasters to pasteurized bulk substrates in jars. I'm thinking of buying one just for that. My plan was to get my substrate to field capacity load up jars and put them in the turkey roaster in a waterbath. I'd keep a thermometer in the jars to monitor temps. Would I be wasting money? I can only pasteurize 7 jars at a time and wanted to up that with the roaster. The one I'm looking at goes as low 150 degrees Fahrenheit. It's a 22 quart I think. Costs about $70.

I load up sub into jars and put them on a cookie sheet and throw them in the oven at 170. no water needed, done several loads now with no cracks
eatyualive does a similar process too but with turkey trays/tins instead of jars
dunno what a turkey roaster is but I'd say get biggest cookie sheet you can, mine can hold 12 jars. I imagine you get more capacity per oven load with eat's method though

This is the tek I'm using from frankhorrigan. I wanted to do the same thing with a turkey roaster.

i wouldnt.
just use a oven bag and a large pot. maintain core temp 140-150f for 1 hrs. use any heat-able vessel you'd like.

or that. if you have to roaster go for it. otherwise doing the same thing in a pot with oven bags is easier and cheaper.
