Grain on "Hold" a Sterile Window or Flush It ???

Had to get surgery instead of wrapping up a full PC of Rye Quarts. Haven't Opened the lid or disturbed the Shaker (closed-loop still). It's been 72-hrs on my stove. Toss the lot or throw agar wedges in and go???

If the jars have gone through a full sterilization cycle, then inoculating them after a 72 hour period would be ok. It's not the best practice, but if grains are sterilized properly, then a few days will be fine.
If the jars went through a partial sterilization cycle, or even worse, the jars have been sitting in the PC without having been through a sterilization cycle at all, retrieve the jars from the PC, open one of the lids, and give the grains a sniff.
If the grains don't smell like anything other than fresh grains toss the lot, and begin again. If they still smell fresh, put them through a full sterilization cycle, and sterilize them for an extra half an hour.

My PC cycle was completely RR-Style at 120min 15psi. Just to be sure, I was thinking about just warming up to 15psi again for 1-hr to cover any fresh mis-steps developing within. Will the Starches/Rye saccaharides be over processed ya think? Maybe 30-min instead? I'm leary to do a smell test since it's gotta be re-run anyway... Hamloaf you aren't saying run it up for 2 and a 1/2 hours are you? That would prolly denature any proteins into mush like ryeberry 'oatmeal' wouldn't it?

Nah, RR sterilizes his jars for 90 minutes. Not 120, so a two hour sterilization cycle was being suggested. You're right about the amount of psi's he uses though.
Resterilizing for an hour won't hurt anything.
