Another Ammonia question....

Hi. So I'm new here and another newbie question I guess. I searched the site for Ammonia related questions but still unanswered, maybe I missed it... Anyway, colonized some jars, all went OK, I then pasteurized some horse manure and cased. No Ammonia smell after pasteurization but after 2 days heavy Ammonia, I mean heavy! Insight on this please? The phoo was dry, mixed with some Gypsum and vermiculite.

It sounds to me like your manure wasn't broken down enough by bacteria.  Even though the manure was dry, it still had
undigested protein that when rehydrated enabled the microbes to digest it and produce ammonia.

There are two ways to resolve this, one is to leave the hpoo in a dry state for extended periods of time.  Bacteria will
still act on the dry manure although much more slowly.  The other is to moisten the manure and let the bacteria break it
down over time.  I've heard that alternating between wet and dry is a commonly used method to encourage the breakdown
of the manure, like spreading the manure out on a tarp, watering it down every few days, letting the sun dry it in
between watering.

All makes sense as you say but, I made a lot of casing and the ones not used are fine, not a hint of Ammonia smell.  This hpoo was very dry and been sun-dried  for quite  a while. Anyway, I fanned it for some air, will give it a day or two and see. Thanks for your input.

If it helps I've made many tubs with hpoo that still had a hint of ammonia, the mushrooms don't seem to mind at all.

The spawn smelt fine also? Could be bactera from the spawn that made it smell like shit.
