Started Harvesting Today! Few Pics, Few Questions!

Started Harvesting on two tubs today. What's the best way to harvest the bunches without sacrificing the smaller ones to harvest the ones that are ready? Pics below to see what I mean.

As you can see, I had a helluva first flush in one of the tubs. Some veils are breaking, some are not. How do I go about harvesting on the best way as to not disturb the sub while also letting the ones that need to keep growing growing but still ensure a second flush? Second monotub didn't come in well on the first flush, hoping for a great second flush.
My third tub JUST started to pin and show knots so won't be harvesting that one for a week or so.
I'm using an exacto knife to harvest, any other suggestions would be great!

grab the edges/tops of the plastic and pull the whole cake out of the tub and set it on a table. next get out your Bushido blade and with one very calculated strike perfectly chop all the mushrooms just above sub level. you'll need to do a lot of meditating and get your chi charged up and centered before you try this.
maybe practice a little in the yard on some celery stocks nailed to a board first to get calibrated. good luck brochacho

Well he did tape the outside to make it look like he cared. . . just not enough to do anything useful in preventing them

That's how I do it too! I practiced first in my bamboo garden

When I was doing my initial research and was under the impression light was a pinning trigger, I prepped and painted my tubs. Not til further on down the line I learned it wasn't and by that time Inwas ready to spawn and bought the wrong sized trash bags. Said fuck it and rolled with it. I'm regretting it on the one tub that just started knitting and pinning but lucked out with these two. liners for sure next go around.

blades in the shop getting sharpened by Cubi-san. This is all I got man.
