Dosing wet mass versus dry mass (Or how I got 96%+ mass reduction drying)

Hello friends,
I am wondering if wet mass or dry mass is more accurate for dosing (when people say 3.5g is this and 5g is that etc) as I'm getting quite high mass reduction when drying.
I have a few examples below that I did as I was trying to see how much the dry weight changed if I let a mushroom fully develop before harvesting (the first 2 mushrooms were similar size but I picked number 2 and left number 1 to fully develop). In some cases below I'm getting 96%+ reduction in mass which means that the wet to dry ratio would be 20x rather than the normally stated 10x (which makes 3.5g closer to 70g wet).
Any comments or advice from more experienced persons?

Dry weight is where accuracy is since water content can be 90-95% in cubes

I would test your scale out. Try and find some light item, like ball bearings or small coins. Something about 1g or less would be good. Weigh 1, then weigh 5, then 10, then 20 and see are the results as you would expect. Of all the scales I have used they tend to show lower weights more inaccurately. If they are heavily misted or watered before picking they will have more water weight than otherwise.

Dried weight is most accurate. I'll go through the maths.
Let's assume dried mass is 1% psilocybin by weight. That would mean 10g dried would contain 100mg psilocybin. If the mushroom was originally 90% water then 100g fresh would contain 100mg psilocybin. If the mushroom was originally 95% water than then 200g fresh would contain 100mg. This is assuming no loss of psilocybin in drying process and all water is removed.
As you can see if you wanted 100mg of psilocybin you'd be judging anywhere between 100-200g fresh. If dried you wouldn't have such an error as, theoretically, dried has no variation. In practice there of course is but it is nowhere near as bad as fresh.

Your wet fruits look REALLY wet. Like you drenched the tub before picking. That extra water can add quite a bit of weight

Thanks for the responses. Scale looks OK (I have a few different jewelers calibration weights that I used to check it and it seems alright).
I found it interesting that I had a very high water% on the biggest mushroom where the moisture on the surface on the mushroom from the fruiting chamber would be the least significant as a % of total mass. I was expecting to see the most difference in water% on the one I left to develop longest but in reality it ended up being comparable to the one that I picked before the veil broke.

I dry with a feeeze dryer and generally get 14:1 reduction wet to dry.

They indeed look wet. Usually, when I get ready for harvest, I like to take the lid off for a while and start harvesting when the skins are starting to feel dryer. But still, mine don't end up at 90% either, it's more like 92-94%.

I get that exact ratio on my dehydrator too, sometimes a bit higher
