and so when the pc is going the tops of the jars are getting rained on from the lid just covers up so no water fills the jars too

I use SFDs or polyfil so water isn't getting in even with no foil. I don't use foil at all if I'm planning on cooling the cooker down in front of the flow hood

You have a pressure cooker, there is a difference between a pressure cooker and a pressure canner, pressure canner is what you want. Pressure cookers operate at lower pressure than pressure canners and are not sufficient for sterilization.

NO, look up presto 23qt pressure canner.

Edit: There is a difference between an insta-pot, pressure cooker and a pressure canner.

Insta-pot and pressure cookers do not get up to high enough pressure or temperature for sterilization.

A pressure canner will function as an autoclave by reaching high enough pressure to generate the temperature needed for sterilization of grains, instruments, ect. For long enough times for sufficient sterility.

The word pressure cooker is decieving, when it comes to canning vegetables and mycology, it is referring to a pressure canner.

Pressure cookers work fine, I have three small ones and a 23 quart Presto, the three small ones sterilise just as good as the Presto.

What you are calling a pressure cooker is actually a pressure canner/cooker, its dual purpose,  but an electric countertop pressure cooker doesn't work for grains, maybe pf tek at a minimum, they only reach 12psi max.

Farms do grain with 0 to 1 psi in barrels, drums and retorts.
I wouldn't use a digital food cooking pressure cooker for mycology

I guess you can turn it back on after 2hrs, but that's the longest time they stay at max pressure.

Farms run that for how many hours though,  let's be real, most people aren't doing barrels (and I believe that is for pasteurization not sterilization, folks ain't doing no 12-24hrs runs either)?

terminology: not all pressure cookers are electric countertop models. i have two stove top pressure cookers which can switch between lo and hi, 8 or 15 psi. they are deffo not designed for canning. grain jars have been cooked in the larger one when i didn't feel like firing up the aa.

I know that the countertop models are separate that's why I made the distinction between them. If your stovetop model reaches 15psi, it is a canner, 15psi is the minimum pressure required for canning or you risk botulism and some other nastiness.

I was talking about 2 different types:
The 23qt presto style pressure cooker/canner (the name itself causes confusion) this is what you want or one or the smaller sizes, it reaches appropriate psi and temperature for sterilization and canning foods.

The electric countertop pressure cooker a.k.a. insta-pot. This is not what you want, it's timer and psi limits make it insufficient for sterilization or canning, I suppose you could make it work, but it is not ideal and a waste of time materials and money.

It is not a tomato tomata thing, there is a difference, that's why some have gauges and a weight, that's because they are pressure canners and pressure cookers, the pots with out the weight and Gauge are only pressure cookers and they are two totally different systems that work in similar ways. You cannot sterilize properly at low temperatures, that why if you read your manual or contact the manufacturer. They will tell you that there is a difference between pressure cooker and pressure canner,  pressure cooker is a general term. Why do you think Presto specifies that certain pots are both pressure canner and pressure cookers, but others are labeled only as pressure cookers because they don't reach temperatures needed for canning food safely. It's the reason bod says in his thread to be sure to get the one with the weight and Gauge, because there is a difference in the pressure and temperature that the pot can reach and the higher temperatures are needed for proper sterilization.

I'm pushing this because I see people wasting money on something they can't use because they misunderstood the use of the term pressure cooker, when in fact they need a pressure canner.  Do some research and you will see that there is in fact a difference.

i appreciate your viewpoint, and i feel we're lost in semantics. there are plenty of _pressure cookers_ which reach 15psi by design yet aren't specified for use in canning. e.g. https://images.homedepot-static.com/catalog/pdfImages/8c/8cb84279-436f-4d91-bb6c-da37ae4eea6c.pdf

page nine shows the pressure specs. page 21 reveals home canning use, and states it only applies to the 10qt model, as opposed to the 4, 6, and 8 quart models, implying those aren't to be used as canners, and as such, aren't themselves canners. they nevertheless reach 15psi and can be used to sterilize grain jars. the particular case above has no gauge and no weight. it's a spring mechanism.

much respect, man, i don't mean to argue just to be arguing. a table is a table, whatever you call it. i don't think it's correct for a pressure vessel which reaches 15psi, and isn't specified for use in canning to be called a canner. but whatever, the universe doesn't give a fuck what we call things. 15psi is 15psi.

edited to clarify, inside a pressure vessel, there is a direct relationship between pressure and temperature. they cannot change independently of each other. 15psi = 250F water/steam mixture.
