Explosion mainly. There are differences between a pressure cooker and a pressure canner. Mainly how well you can dial in the PSI and how long you can hold it there. the size difference. Canners are much bigger. More durable in my opinion. Thoes damn insta pot things have been exploding left, right and center.

[/url] I agree, it seems to be a 23 quart, but with no pressure gauge. I picked it up on craigslist a few months back for cheap, still in the box. Either way, it was a success. I just got 10 jars done with it. Time for a brew, and a bowl 
My 16 quart Presto cooker has no gauge and a similar rocker weight as you have on this model you posted. Did you vent for 10 minutes and add your rocker weight without additional weight added or did you add weight as suggest in the beginning of this post?

Way to go. Craigslist is awesome. Now have 3.5x capacity, just scored a 16 qt presto pressure canner used once, filled with 6 Piece Canning Set & boxes of wm/rm lids/rings for $25! Was making do with a 6qt Instant Pot that held 4 pints. I'll still use the IP for agar & sterilizing tools, but the presto has upped my game & will save me loads of time.
Bod, thanks for the great tek! Will definitely lower my learning curve switching from tiny auto electric to descent sized manual pressure canner.

Don't worry. A lot of people are surprised at how it actually works because they only have a basic wiki article understanding.
There's a reason medical autoclaves use vacuum pumps to purge trapped air. There's a reason those overtook gravity autoclaves.
In fact the entire medical field has to use vacuum pumped rather than gravity type autoclaves because of how inherently more effective they are.

Alas, if you don't believe it you can try yourself. Don't vent and do vent. Get a maximum registration thermometer. You'll see you don't hit the temperature you should with entrapped air in the sterilizer
