You can use a pressure cooker, Pressure canner, Autoclave, or sterilizer. And even a pot of boiling water

Thank you for the write up. I was wondering what PC would be good and reading this was very helpful in making a decision to purchase the Presto 23qt. I knew I saved my reward points for something.

I grabbed a big flat washer from the hardware store ... Hopefully, it is heavy enough to do the job that the quarters did.

Edit: Pressure Canners: Not the Same as Pressure Cookers Pressure canners are not the same thing as pressure cookers, and it is important to understand the difference. Pressure cookers or pressure saucepans are used to rapidly cook meats, vegetables and other foods for a family meal. But they may not maintain adequate pressure, and they heat and cool too quickly to use them to safely pressure can foods. Pressure canners have either dial or weighted gauges. Pressure canners are necessary to safely can foods such as meats and vegetables that are low in acid. Pressure canners and pressure saucepans come in a wide variety of sizes. Pressure canners may hold up to 22 Quarts of canned food, and are able to process food at pressures up to 25 pounds. Some popular brands of pressure canners are Mirro, Presto, and All American. Pressure cookers usually hold no more than 4 to 6 Quarts, and they may, or may not, have a way to regulate the pressure. Some pressure cookers come equipped with a weight to cook at 5, 10 or 15 pounds of pressure, while others have no way to regulate pressure settings, or simply have settings of ālowā, āmediumā and āhighā. Pressure cookers do not come with pressure gauges, and they cannot be safely used to can foods. Pressure canners and pressure cookers work by trapping steam and building up pressure inside a pot. The steam is trapped because the lid, which is fitted with a rubber gasket, forms an airtight seal once itās locked into position. As the contents of the pot heat up, steam gets trapped and pressure builds. At 15 pounds pressure, water boils at 250°F, almost 40°F higher than in conventional pots. The high pressure and temperature destroy microorganisms more rapidly (pressure canning) or cook foods more quickly (pressure cooking). Both pressure canners and pressure cookers that youāll find in the stores today are a far cry from their predecessors. The new āsecond generationā pots are lighter in weight, and they have new built in safety features that release steam if the pressure gets too high- features that make them more fun and easy to use. If you are careful to follow the directions that accompany your pressure canner or cooker, you will enjoy using these contemporary pots. Spent the day cooking, drying and pcing 20 jars of oats, 15 minutes to go. I am putting quarters on my weight next time. This jiggle/hiss is like fucking Chinese water torture!

Or just run it at 14psi. Either way you're setting it up to run under where the weight would jiggle at.

Hello
I had some problems with grains coming out a bit wet. After reading your PC tek closely, I see that you said the jars should have 50% surface area above water and that your water level with 3qts and seven jars is below this halfway mark. I have the 16qt Presto PC and when using the recommended 3qts the water level reaches above halfway.
This is where the level of water comes up to:

I am wondering if this is why my grains were coming out wet. I am assuming to fix this problem I would just need to elevate the trivet using lids or something, but I thought that the 16qt and 23qt Prestos were the same size at the base, just taller so I don't know why the water level would come up so high. I am using the lowest engraved mark on the inside of the canner to measure the 3qts.

They shouldn't be getting more wet during a PC cycle unless they tip over. Water comes up about 1/2-2/3 the side of the first layer of quart jars in the 23q presto. Sometimes i take a little water out so they don't bobble around at all.

3 quarts of water is barely even 1/4 of the way up my quart jars. Are you guys adding more than 3 quarts in the pressure cooker?

Hi! Iām new, quick question because I either havenāt came across it in posts yet, and/or have not been able to find an answer I understand through googling. Is there a way to use an electric pressure cooker ( or maybe a small autoclave)to do canning for the jars? The only Iāve seen that gets to 15 psi is an instant pot max. Itās only a 6 quart. I also just found another thatās called Carey by Nesco. Gets to 15 PSI. I donāt have access to a stove for the amount of time needed to sterilize/sanitize the jars. Might be a stupid question, but TIA! -Mage (May have accidentally posted this twice, sorry!!)
