This soup is a nutritious high-protein meal and an excellent choice for vegetarians. The boiling time for the peas will vary depending on your altitude so just keep checking them after a while.
Ingredients: 1 tbsp. extra virgin olive oil 1 medium organic onion, chopped 1 tsp. garlic powder 1 tsp. ground cumin 1/2 tsp. ground sea salt 2 tbsp. soy sauce 2 cups uncooked organic split peas 2 quarts filtered water 1 medium potato, peeled (optional) and cubed 3 stalks celery, chopped 3 carrots, coined
Directions: Saute onion and spices in oil for one minute. Add soy sauce, peas and water. Bring to a boil, reduce heat and simmer for 1 hour (again, times will vary). Then add the potato, carrots and celery and cook an additional 30 minutes.
