Sorry to post a million different threads today!! Anyhow, I had this question just pop into my head. I was told that if there were some uncolonized areas on the substrate to scrape them off. What about the very top, the verm that is used for protection?? I'm going to crumble my cakes and case them, so if this isn't all the way colonized under the lid, do I need to scrape that off as well?? Thanks!!

i always did. my reasoning was that the verm barrier is there to trap contams before they get to the cake. in essence, that verm is a dirty filter. scrape it off, flip the cake upside down, add fresh verm and moisten so you have a water reservoir. my .02, i'm sure none of what i just told you is actually necessary
