If using WBS, do I have to remove any kind of specific seeds before pressure cooking? Are the sunflower seeds fine? What the hell is gypsum? Is it mandatory?

Is this process right?
1. Let the WBS sit in water for 24 hours and drain 30 mins
2. Fill pint jars 3/4 full with the wet WBS
3. Pressure cook under 15 psi for 1 hour
4. Shake immediately after pressure cooking

Miss anything?

drain the birdseed for at least a half hour before putting into jars...
cujo could never figure why his multispore wbs jars wouldn't colonize...
until he drained em in a big collander...
too much moisture is a breeding ground for contams

also sunflower seeds are fine, i usually take out as many as is reasonable, but most peeps seem to say it doesn't make a difference.
also cujo shakes the jar right before innoc too

i know it is a buffer, like calcium carbonate...
but cujo says he's never had problems w/o it
only time i've heard of buffers used is in casing layers, etc...

Gypsum is not used as a buffer, but it is supposed to improve shakability in your grain jars.  While not necessary, garden gypsum is readily available in most garden stores.  It's also what 'sheetrock' (walls) are made of, and you could probably get away with using that, if you have extra pieces laying around.  I can't remember the technical/chemical name of gypsum, I think it's a calcium compound, maybe CaCO3.
