Right... it's just a layer of whatever I used on top. It might not be a true casing but I have better results doing it like that. The spawn colonizes the coir from the bottom up and the top layer kinda acts like fluff with moisture I suppose 
I like the way the myc crawls up the top layer Here are some pics of a shoebox I spawned earlier this week maybe you can see what I'm trying to describe

Here's a dub'd shoebox on the left. It has another shoebox upside down on top of it to give room for the mushies to grow while keeping conditions nice inside

Haha this hobby gets a little nerve wracking  I got 5 PE shoeboxes spawned to only coir with a coir top layer. I haven't tried only coir yet with these so I'm a bit nervous. It's only 1qt of spawn per box so they might turn out sparse when they flush too. We will see

Same, except I added a little bit of verm to soak up the rest of the water...this is how the myc looks in one of my shoe boxes. I just assumed it was bacterial

I used 1 brick for the 5 boxes... I really wanted to add verm because I wanted more sub, but I wanted to see how these did on straight coir more haha
Your shoebox looks good! Maybe keep your eye on that top left corner there, but I think you should be fine

Do you think the trays would perform better in unmodified tubs, or in a dubtup setup? I use unmodified tubs for all my bulk grows and they work beautifully with little set up, but wanting to try shoeboxes to test some clones I'm about to put to agar. Trying to figure out which simple method, dubtubbing or trays in unbodified tub, would provide better results.

I use a 20QT modified tub to "dub-tub" mine when testing clones and cultures, that way im able to get an idea of what condition the culture likes and help me when it comes time to put the culture to bulk. I use 1 inch holes but im sure unmodified works just as well, just food for thought

Without a liner, how do you prevent side pins? I keep forgetting to put liners in my shoeboxes
