Got my first flush all dried out, the shoe box gave me 48g dried. Not bad IMO.

How did you dry them? I'm curious to see if you used a dehydrator or a different method. Not trying to say this or that I'm really just curious and must know. 
Congrats on a nice flush dude!
Edit: Also 50g dried mushrooms can come from 1kg fresh fruits or 500g fresh fruits. So one can't really see from a pic how high the water content is in the fruits.

Thanks, I used a dehydrator I left them on there about 24hrs. Really unsure of the wet weight, no scale around, I would guess around a pound maybe 1.5lb. That's just a guess.

I usually end up with 18-25g for one good flush. But I've also noted that my fruits are ~94% water. Yours are probably at around 90%. I've even seen 88% from growers.

You can tell the sub isn't overly wet from misting and I'm pretty sure matted mycelium is caused by the sub drying out, not being too wet. It doesn't resemble matted cube myc to me anyway. It looks like trich that's going to turn bright white and then green and sporulate, IMO. To me, the fact it's a lone splotch in a more uncolonized part of the sub makes it more likely to be trich, as well.

This is very incorrect. Trich is super fast, eats cube mycelium, and starts off gray before it goes green. Given those conditions, you can easily overlook it in a jar and have it pop up shortly in your sub. In my experience, it's very rare to see green in the jar. I believe sporulation is triggered by stress. Guessing, but shaking a jar would be enough, meaning 4 days is more than enough to go green.
It should be stressed that more than a cursory glance for green is needed when checking spawn jars for trich. It's not always obvious or super ugly.
Furthermore, you don't even need contaminated spawn to wind up with trich in your tub. You can have trich mycelium fragments floating around that land on your sub and begin growing. Or from a tub you didn't wash properly. This is why we stress moving anything suspected with trich far away from the grow area immediately.

Thanks, it was cvg and I believe it was 2q oats with 2.5q substrate. Working on flush number two.

This third shoebox produced best even tho it pinned on only one half of the very thin substrate. 509g. No side or bottom pins in any tub.
500ml grain spawn + 2.5L Coir so 1/5 ratio.
