OP you dont need to mist and fan a set amount thats not a good way to do it. Look at your cakes when they look like they have no water droplets on them give them a spray. Also bottom water those bad boys and get some nice well hydrated fattys.

About bottom watering, how long should you let your cakes sit in a standing pool of water? The cake will undoubtedly absorbe some of the water, but at what point would bottom watering be considered detrimental? I.E., how often should you change the water in the bottom and what are some of the negative signs per se when you bottom water, if any.

You wanna change it every 24 hours. I had my cakes sat in water every day changed each morning no contams. If/when it visably isnt soaking up any more water you can stop but honestly youll be very surprised how much they can wick up mine never where fully soaked, some mornings there would be a dreg left but once the fruits really get going i was constantly topping it up (not including the time there was a hole in my foil dish and didnt notice lol) The only real issue is the metabolite build up like a jelly what can build up if you dont change the water. It really makes a big difference on the size of the fruits.
