I just started a cranberries and pominagranite wine with a premier cuvee yeast.

Orange blossom/apple juice cyser with narbonne yeast, spiced with cinaamon and vanilla.

Im not so big a wine guy, but some sour red ales are coming up and theyre almost wine like.

I don't really do beer all too much but cyser can take on beerlike notes when you let it go to dry, especially when you use clover or buckwheat honey.  Never have done orange blossom. Do you find that it's worth it.

I make sweet meads ending up around 17%, never made a dry mead but I did recently enjoy one from a friend,

I definitely find orange blossom honey to be superior to most other honeys and the best meadmaker I know uses tons of the stuff, sometimes blended, sometimes singularly. Some say "heather" honey is better but i dont know what it is or how to get it.

I make a drive out to the semi-local apiary and buy a gallon of fresh honey or two.  Makes a nice date too :smile:

If youre not in an area with citrus you can substitute, just try to get the best quality honey you can, avoid cheap tubs of generic honey very often theyre cut with corn syrup and other crap or superheated for filtration, bad bad bad.

Carefull with orange blossom honey as it's said to be the most counterfeit honey their is,  My local supermarket sells a brand of 'Orange blossom honey' thats made in New Jersey   ! ! !  (Their are no orange groves in NJ)

tupelo honey is said to be one of the sweetest honey their is

Hi everyone,
Currently I have a 5 gallon batch of mead in secondary, a 5 gallon batch of cider in secondary, a one gallon mead in primary (soon to be a capscumel), and two one gallon batches of wine made from store bought concentrate one from Welch's and another from generic to see what one tastes better. It is cool to see that there are other people into fermenting here.

it's not a wine but I'm going to be brewing a dark heavy beer bittered with wormwood. 10 percent abv two of these puts me right down.

That sounds like a good date!

I've got a dry forest metheglin going right now, a simple 1:1 blend of herbal mushroom tea and honey water. The brew cleared up beautifully with Belgian ale yeast. I'll referment it with champagne yeast this weekend, then bottle condition it with more Belgian yeast.

For 1 gallon of tea:
  • 14 g dry mushrooms
  • 14 g hawthorne flower
  • 7 g fennel seed
  • 3.5 g black tea
  • 5 black peppercorns
  • 3 whole cloves
  • 1 c (1/2 lb) cane sugar

Boil the tea with another gallon of water, 2 lbs of buckwheat honey, and 1 lb of clover honey. I used shiitake and oyster mushrooms in the tea, but chanterelle and reishi are better.

Possible ingredients for next time: pu-erh tea, dandelion root, rosemary, juniper berries, wildflowers, mosses, and lichens.

I have to try this next. How do you use the wormwood? Does it replace one of the hops?

I've used wormwood in several liqueurs before, and always extract it separately for only 1-2 days. But it seems much less poisonous in beer wort vs. grain alcohol.

I only use it during dry hopping. and a little goes a long way. I have a sensitivity to hops so I I try to use as little as possible. ill dig out my recipes and post a couple.

Nice variety! I try to always have something fermenting in my room. The bubbling is very peaceful at night.

By the way, the forest metheglin was delicious. I'm ageing the last bottle for a year.

Only a week or two between bottling and drinking. A couple bottles sat a few weeks longer and mellowed out nicely. The fennel really changed the nature of the sweetness in a refreshing way.
