Rye prep Help.

Can I leave the rye 6 hours soaking and then simmer till they are ready ? I have read the no soak Rye tek and I wonder if I can leave the rye only six hours soak.

I wouldn't...EvilMushroom666 has a grain prep tek that works very well. I have had a low contamination rate with this method and good PC times.
There are many ways to get to the same place, but endospores, proper moisture content of grains, etc really effect the outcome of the project. I'd do a 24 hour soak and check out the tek I mentioned.

Ok. Other people have told me that the 24h is to long. And I should do 12 hours. And then simmer For 10h

I can vouch for the Tek I mentioned. I use it, I'm doing 14 jars this morning that way. There is a good thread on endospores and soaking...but I don't have the link.

IMO, u can't go by exact times. gotta go by texture. grains pop like a pimple when ready. hold it up to the light and look for a tiniest amount of "grain innards". al dente style.
never simmer for 10 hours.
there is a thread by bodhi in advanced mycology about effects of extended soaking (24+ hours I think)

When you boil the grains, use a medium-low heat. Blasting the stove has given me almost 3% exploded kernels on rye, usable but you can tell I rushed it.
Yesterday I had to free up some jars from other projects, so the grains sat out for about 6 hours after steaming. They came out well.
