This is both from lack of FAE and drying out. It means they weren't misted directly at all, and this is an unideal chamber. I see no holes on the chamber so it really isn't surprising they have no fae. As for misting, you must keep the surface damp/glistening with absolutely no pooling water basically constantly.
My recommendation is to build a tried and true SGFC and Mist properly

If your humidity is where u say it is...
U need to figure out why the cakes are drying out.
You also need to figure out why the cakes aren't getting enough fresh air exchange FAE
Its not a contamination from what we can tell.
If u dont get those cakes happy tho ur pin set and yield will prob be meager

Then there's literally ZERO air exchange. In order for there to be 95%+, the air is so saturated with water, it can barely hold anymore, which means there's so little dry air being exchanged, it's building up to full saturation. A SGFC humidity is a constant fluctuation between 55-80% Rh depending on environment and room currents.

I said he needs to mist properly and DIRECTLY until glistening/damp with a link even. I really do mean that

His chamber NEEDS holes. Passive Fae for cakes in a decently small chamber will trump all.
