First time grower, seeking advice for indoor grow room

Hey everyone! I'm interested in taking the leap in to the world of mycology. I just got done watching a bunch of youtube videos that has me super excited!!! I came across a channel made by a guy named Willy Myco and the way he described the process really helped me feel confident about being a first timer. At first I was going to just build a shotgun fruiting bin and give it a go but I would rather develop an automated climate for fruiting rather than babysitting a box 4 or 5 times a day- misting and all that. So here's what I have available... My bed room is pretty big and one side of it is facing toward the sun all day with screened windows and blinds to adjust the free air exchange and the amount of light going in to the room. It seems like a great spot for a fruiting chamber since i won't have to run any lights or air ducts or anything.
I have been doing some searching on the forums for others that have turned their closets/garages/rooms in to a space for shrooms and found some great ideas, but I figured it would be worth it to make a post and see what you guys with more experience would recommend.
The space is 360 cubic feet total with a width of 9 feet, height of 8 feet, and depth of 5 feet.
I was imagining sealing off the area with clear plastic on all 6 sides and building a door to go in and out.
Inside the chamber would be shelving going around the perimeter of the room with plenty of space for bins/trays.
The part that I would like more advice on - is the humidifier/ fogger and how that stuff works. Would it make sense to build a raised floor with a drain to collect excess water collecting on the edges of the plastic? What type of humidifier set up would i need?
I plan on growing a variety of gourmet mushrooms to sell to my community along with fruits and vegetables I am growing in the backyard.

With that space you basically have two options.
1.) mono tubs on shelves ( black plastic ones made for your garage ) / plastic table with monos stacked/ monos stacked ground up.
2.) a Martha ( automated green house )
Depend on you man.
You also have to think about, where you're going to do you SAB or flowhood work and where you will keep your colonizing grain and agar.

I know I want to do a ton of monotubs in an enclosed and controlled environment, does anyone have any info to help me discern what type of humidifier to look for or has anyone built something like this with some tips? or links to other builds for reference?
as far as the rest of the process goes I have other areas where I can work to prepare the substrate, inoculate, and store jars for colonizing. What is SAB?

For monos you don't need a humifer A martha you do. Im going to save you a lot of time. Look up pasty plates and his agar work. Build and use a sab. Start getting everything together, i mean jars, your grains, tubs, coir. The process of make pasty plates is simple because your going to need a clean culture to Adviod contams. Once you have a clean culture on agar make a transfer to a lc jar which you'll let colonised. Now prep and make your grain jars and a lot of them maybe 48 qt jars starting out. Once colonized cleanly you spawn them to monos three to four high. This is all in the name of yeild and stealh. I love marthas but people will see them and ask bad questions like hey whats that. Vs monos no one asks or even looks in them its hidden in plain sight. Plus it's easier.

Hey tump thanks for your input, ultimately I am looking for a system that will yield the most fruit with the least amount of constant maintenance during fruiting. If I understand correctly, the mono tubs require constant misting via spray bottle and fanning, every 4-6 hours. As far as the martha method, I am not concerned with appearance as this grow is for gourmet mushrooms and I will be showing the build to family and friends. With that being said, would you still recommend mono tubs?

incorrect. its actually the exact opposite. monotubs are the only true set and forget. you do not mist and fan a monotub. you are thinking of a shotgun fruiting chamber.

this specific forum on this site is for growing magic mushrooms. the gourmet part is a different forum. you can find it on the forum index.
for an edible grow, you will most likely want to build a martha greenhouse.

But they do take some dialing in to get the moisture right but after u get that down its super easy.
Most modern grow set ups dont need a lot of "babysitting". Even the SGFC is pretty set and forget with minor misting.
