East Bay Finds

I went for a little hunt on Saturday before the big rains hit. My hunt was a 2-parter. First, I went to a known psilocybe cyan patch just to see if anything was still sprouting. Then I headed to the hills to collect some Candy Caps. I found a few of these the week prior and confirmed their id on Shroomery.

Still magic! Terrible photos but it was nice to see some actives still sprouting. In fact, there pins still sprouting. I also found a nice patch that had was to far gone to collect. It would have been about 40 nice cyans if I had checked on it a week earlier.

I believe that these are the scarlet cups aka Sarcoscypha coccinea.
Found a few chantrelles. But I still have some in my fridge from my last hunt so I wasn't particularily looking for them.
A yellow Jelly. It think is called Witches Butter aka Tremella mesenterica, which is apparently edible...
Just when I found a bunch of Candy Caps, it started to pour rain. I tried to get a photo but my lense got wet and it became pointless.
My haul! A few chantrelles and a bunch of candy caps, aka Lactarius rubidus.
Candy caps smell amazing. Like brown surgar and maple syrup.

Ready to make some sort of dessert with them. Please send a recipe if you have one. Thanks!

Do you make cookies with your candy caps? I hear some people do that, have always wanted to try them that way.

The candy caps were under oaks in the berry bushes. Luckily, the berries bushes are barely there this time of year.

I sort of followed a recipe and they turned out fairly crappy. I only used 10 grams so I have plenty more. Even though these cookies turned out as hard as hockey pucks, they smell so good. It's like walkng into a maple syrup factory in my kitchen.

Nice finds gravity. I collect those as well, and really love them. I really enjoythem fresh. Even though they aren't a substantial size, they add an amazing element to a lot of dishes and that maple flavor can really take on different notes when combined with savory flavors. I have made some amazing ice cream with them. Heres my favorite recipe- 7 grams dried candy caps ground, 20-30 bay nuts roasted and ground, 5 egg yolks, 2 cups of cream, 1 cup of milk, 2/3 cup sugar, pinch of salt. steep candy caps and bay nuts in cream/milk/sugar/salt mixture for 20 minutes and then bring it to a simmer. remove from heat right away. Add 1/4 cup of the hot cream mixture slowly to the whisked egg yolks while mixing(to temper). In a slow steady stream, carefully add yolk mixture to the hot cream/milk while beating. This is the trickiest part- if you add it too slowly or quickly and you don't whisk enough, you can end up cooking the egg which isn't what you want. cook over medium heat while stirring occasionally until mixture coats the back of a spoon. Pour through a sieve and cool in the refrigerator overnight. Process in ice cream maker of you choice. freeze to desired consistency.
The end result tastes like coffee-maple cream with hints of chocolate and hazelnut. You can also leave out the bay nuts and just make a candy cap ice cream, which is delicious
