Controlling monotub temperatures

So I have spawned to my first monotub last night now I'm in the colonizing stage, my concern is temperature and keeping the mono warm. I'm not sure what the colonizing temperatures are exactly but they have to be somewhat similar to the temperatures for the grain spawn I would imagine.
What I am considering is using my inkbird ITC-306 temperature controller and a heating pad to control the temperature in the mono because we keep the home at about 68F and it is winter here where I live.
The question that arises from this tho is if I use the controller and heat pad where should I place the temp probe? Do I want it inside my tote check the air temperature, I thought about just taping it to the mat it's self to maintain the mat at the ideal temp that the totes needs to be....for example keep the mat heated to 80F there would be some heat loss when the heat was transferred thew the tote and liner and all that so I would not burn the mycelium or anything like that. There is also the option of putting the probe in the bottom of the substrate it's self but I'm not so sure about that as the wire would have to run out and all of that and I currently have the tote in a large black trash bag for colonization.
Anyone ever use such a set up before and feel like sharing their experiance with me on how they feel the best way to set this up would be?

I always try to keep my room around 72-75, 68 should not be a issue all it might do is ever so slightly slow down growth.

What is optimal temperature for growth tho? I mean what is that point where I will get maximum mycelium growth but not speed up risk of contamination. I did only spawn to coir and verm so from my reading these are really resistant to contams so should contamination still be a major concern for me at this point? Also from my reading this part of these his he process takes about 10 days as well

during the summer my house was about 73f all day. now in winter the heater is set to 72 but my grow room is always about 65-68. i think a quart takes like an extra day or two? bfd.
i prefer fruiting in colder temps ...and when its slightly dryer. hot grow rooms+humidity=suck

I too prefer running a little on the cool side. It seems to have zero effect on the colonization time and reduces the occurrence of contaminates. Cheers
