How easily do cakes dry out? Do they just need another dunk? (with pics)

Hey everyone. This is my first time growing. Since I didn't know where to start I went with a grow kit. The jars colonized and I set up the fruiting chamber, but after two weeks with no pins I started doing more research and I watched Willy Myco's vid on SGFCs. I decided to build a new fruiting chamber and make a SGFC. I redunked the cakes for about 23 hours. I didn't have enough perlite at the time so the humidity may have gone down to about 80% a few times in the first day but that was only for no more than probably 20 mins at a time and only for one day. I have plenty of perlite in there now. It has only been 3 days since I redunked them and put them in the new SGFC so I know more time is needed. Should the cakes be wet to touch? I did have to take out the cakes for about 20 mins when I was adding more perlite. Humidity is now stable at 99%. 

Do you think that would be enough for them to dry out and they need yet another dunking? Do they dry out that easily? If the cakes dry out for awhile will they die or will another dunking be all that's needed?
Since my cakes have been out of the jars for about 3 weeks and no fruiting is this bad for the cake's health?
I feel I have done everything with the fruiting chamber correctly. 1/4" holes on all 6 sides, 2" apart. 12 hour light schedule. 99% humidity. Temp is about 70 degrees. I have the cakes sitting on small pieces of foil. Misting and Fanning 4 times a day about 4 hours apart. I heard you should fan more than you mist so I am starting to do that.

I did get the jars premade. I just had to inoculate them. Colonization went well and the cakes look healthy. I will make the jars myself next time.

I have 7 cakes in the SGFC right now. And it has only been 3 days, but I am wondering if there is anything that pops out at you that I should do different or if I am doing everything correctly.

great pics. its the only reason i read the post :p

you have the basics down but you are focusing on humidity when its fresh air you need to focus on.

the rh inside the sgfc should be 60-80ish i think. the rh at surface level is important. proper misting of cakes when they appear dry is what does this.
(or so ive read)
