Sorry, but that is flat-out wrong. I can't just let it slide. I've worked for many years to overcome bad advice that was given out in the early days when mushrooms growing was not understood.
NEVER stop misting. Growing mushrooms require moisture AND fresh air. If you're providing the proper amount of fresh air, your fruits and your substrate will dry out. This leads to small fruits. You MUST mist from the pin stage all the way to mature fruits if you want a proper flush.

Again, incorrect. The purpose of a casing layer(when used) is to hold moisture to support the flush. By misting, or even pouring water directly on the casing layer surface, the mycelium that has partially colonized the casing can absorb this moisture and carry it to the substrate, where it can help the developing mushrooms to grow.
The reason deeper substrates support larger flushes and fruits is because larger substrates hold more moisture. If you give proper moisture control to small substrates, they will perform well too. It's all about water, as can be seen by the picture below of very large mushrooms on a very small substrate. It's all about misting and fresh air, from initiation through harvest. RR

I didn't want to update until I was almost 100% sure this tub wasn't going to contaminate. It appears to be pinning beautifully right now so I'll assume it wont trich yet. . .
Here are the details.
I had two fully colonized jars of WBS. I G2G most of those into more jars. The little that was left I made two small projects. The one looked like it had some bacteria issues. But it actually survived and fruited really well. However, I was concerned about the jars I G2G to. They looked iffy because a few spots in the jar didn't want to colonize 100% right away.
So I took one of those jars and pasteurized some substrate. To ensure it would colonize quickly I used more of a 1/0.5 ratio. It colonized 100% in less than 7 days. on the 7th day I decided to put a casing on top. Since it is what I had laying around I used some verm and coir. 60/40 tek.
I let it colonize the casing for about a day and a half and put it into fruiting.
It obviously didn't want to stop colonizing! But it finally started to show some knotting a few days ago and today I see some nice pins forming!
Interested to see how well it produces with a sub that looks maybe an inch.
If you look closely you can see all the pins forming. 

Here is a side view to show how thin the sub is.

nice work dude!!
your casing mix is more of a toplayer since myc eat coco like its coco puffs but i do the same. also thin substrate..also pinning and side pinning.
  ive been leaving my lid open a bit too.. im around 24/7 to keep surface conditions legit.

I am actually excited about this one. With my limited experience it has proven that adding a casing always causes the tub to perform better.
