Hyrdating fully colonized sub before casing

Hey forum!
First time poster, long time reader. I've tried looking for the information pertaining to my circumstance but has come up short.
So, some background information: Im doing some monos currently with a manure/coir/verm sub. To pasteurize my sub, I used my oven i.e dry heat. When spawning i noticed that some of my of my substrate was field capacity and some not. It has been over a week and I have yet to check for the progress of the colonization but i am worried that some of the substrate in the tubs may have been too dry.
If the tubs are fully colonized, would i be able to hydrate them, by dunking or adding water between the liner and the sub, before i throw on the casing layer and initiate pinning? and if so does it matter the sterility of the water?
I will also be pasteurizing my casing layer, if that information in pertinent to anything at all.
Also for future reference, if after pastuerizing a substrate i find that it is too dry am i able to add water before spawning?
Also Also, I currently in the process of acquiring materials to make an Akiras Bulk Steam Pasteurizer. The reason im using my oven currently is because its a convenient way to do the amount of sub i want.

Should be fine. And the casing later will supply water to the sub as well.

If the substrate needs to be hydrated, I believe it is best to wait until after full colonization. Tap water is fine. Sterility is not really an issue once colonized. If you think it's too dry to colonize, then just start over. Do you rotate your substrate in the oven? The bottom will cook things faster(hotter) than the top. Should help give you more consistent results until you can use your new pasteurizer.
