Should I birth now? Or wait 3 days???

-Long story short, I have 4 cakes 100% colonized. Issue is, I don't remember which ones are fully consolidated. I know for sure at least two are, but the other two were a little behind. I'm going to be away from home friday afternoon until saturday night.
Q: Is there any way to determine which are/aren't? Q: Should I birth all 4 before I leave my house or should I wait until I get back Sat night for the dunk? Q: How long can cakes remain in jars(after 100% colonization) before they start to pin/fruit? (If I wait until sat, it'll prob be close to two weeks for the two that I know are for sure done.)

Let them be, even an extra week would be OK...

They can remain 100% colonized for weeks, they will eventually start fruiting in the jar like crazy, but you can def. leave them alone as long as you need. I wouldn't birth them now, give them some more days. Cakes that had a longer resting(consolidation) period tend to produce even better than cakes who didn't.
Giving them some extra days to chill will be very good for your grow.

for future reference, labeling is super important.
it sucks to have projects going on and being half through and all the sudden go... 'shit which one is which?!?!'
