Need some myc/trych smell help!

Some background on the situation: 4 spawn bags of rye berries innoced with F+ strain, kept in a still air incubation chamber at 76-78 degrees. When the bags were ~40% (about 3 weeks), tragedy struck: one bag got a case of the trich (caught it early) however the FAE had somehow partially separated from itself, essentially opening pandora's box and allowing the trich to breathe. The chamber smelled slightly sour and bitter (not mushroomy). Since this is my first grow I don't know what good or bad mush smells like yet, so my first assumption was that this sour and bitter smell was trich. I took the incubation chamber outside, got rid of the trich bag, wiped the remaining 3 bags down with a light coat of alcohol to kill whatever might be on the bags, then moved them to a new & clean incubation chamber. I wrapped the new chamber in 3 trash bags to try to isolate it in case the rest were infected.
Fast forward to today, about 5 days later. The myc in the bags are still growing, about 60% now. No green is present in any bag, but the myc looks slightly different than before (not as "strong", less "feathery" and more "fuzzy"). The problem, however, is that the new incubator now has a STRONG smell of the sour/bitter smell from before. I don't know what to do as visually it looks okay, but then again I'm a beginner. Advice? Does anyone know if F+ smells bitter?
I need to buy a new SD card reader so I can upload some pictures tonight, I'm sure that would help clarify.
Edit - I'm seeing around shroomery "bacterial growth" and it seems this may be what I'm experiencing. I can't find any good info on what bacterial growth is or why it's okay to continue to grow through it, anyone got a good link?

Sounds life you might have bacteria or yeast in there. Rotting or fermenting.

Exactly. This is what you have.
Trich's smell reminds me of a damp storage room, that's how I recognize it. But what you're talking about is bacterial contamination, it's not as bad as trich, you might still get fruits out of bacterial spawn.

Not finding much good info on bacterial spawn... Is there anything I should do different or be aware of? Cross-contam concerns? Or just proceed as normal?

Well it is more prone to contamination as bacteria weakens the mycelium and it's always a risk further expanding a bacterial culture (e.g. doing a bulk grow with bacterial spawn), so if you want to stay on the safe side, you might want to fruit it as it is, without further expanding it.
or if you choose to spawn it to bulk, it's safer to choose a lower substrate:spawn ratio like 1:1 or less.
there will always be a risk of it not completely colonizing if you choose to spawn it to bulk.
actually, even if you spawn smells good after completing colonization, that doesn't mean it is 100% clean, there might still be bacteria in it and visual cues are more reliable when inspecting spawn for bacteria.
that's why everyone here is praising agar and proper sterile technique so much, it's not that easy to get 100% clean spawn, especially straight from syringes.

1:1 substrate ratio is HIGH 1:10 substrate ratio is LOW
