Some monotub questions

Hey guys, so I will be using monotub for the first time and I have two main things I might need your advice on:
1) The temperature I will be growing the shrooms in a walk-in closet which has a ventilator connecting it with the outside (I can vent the inside air to the outside sucking the air from the appartment in via the imperfect door).
Now since this room has a window (some light manages to come in but I will still add in a 6500K lightbulb) the temperature gets down do 65F, I guess I might raise the temp up a bit by venting the room and forcing the warmer air from the appartment in but this hasn't been tested yet.
I know 65F isn't good for the cubes, but it's winter and I just can't get the damn temp up. Will 65F suffice as long as I am not in a hurry with the grow?
2) The monotub itself
Ok so the second thing that worries me is this:

Here you can see the tub I want to use.. it's filled with 14,5l (which is 15.3 quarts (real quarts, not mycoquarts). This fills the tub up to about 10cm (4 inches) which is the golden standard for substrate depth.
But! As you can see it seems like it could leave less than ideal room for the shrooms above the sub...
I have currently 7 mycoquarts of spawn almost ready and the 14,5l water test takes into consideration 5 quarts of spawn for the mix.
Should I change the amount of spawn? sub? let it be?
Thanks for any imput!!

My fruiting temperatures are just a little over 65F in winter. The tubs/trays perform good enough

You have 20cm between the sub and the lid. I doubt your first flush will give you 20cm fruits.

OK and what about hole placement, I will be using pasty's micropore tek for covering the holes...

The last grows I used monotubs that are similar to pasty's mini monos. Follow pasty's TEK. My tubs are still in the beta phase.
This is the hole design I use:

OK, one more question: I will be following 50/50 coir tek soon and I got this going in: 650 grams coir (1 brick), 3 quarts verm, 4.5 quarts water + 6 mycoquarts going in. And I want total of 14,5l sub in result (roughly 15 quarts). The volume of spawn, verm and water doesn't change but what about the coir, it will get fluffy and suck in the water, so does anyone here know how many quarts/l of coir will I get by mixing 1 brick with 4.5q of water?

After hydration one 650g brick of coir expands to about ~ 8-9 Liter volume.
