Oyster mushrooms

No matter how I try to cook my oyster mushrooms they come out rubbery as all heck.

Any tips or tricks?

I just throw mine in with oil and some garlic usually, saute until they're ready.

You want higher heat for less time, actually. Chop them up and sautee' over medium-high heat for about 4-5 minutes. Make sure to pre-heat the pan and oil, as you should any time you're cooking them. Don't add salt until they're done because it'll pull moisture out during cooking, making them rubbery.
