so how does them getting remoisten by air humidity effect the strength? I was always under the impression that heat and light and air affect potency not hydration

This is my understanding of the subject.
Psilocybin is water soluble, meaning that it will readily dissolve into an aqueous solution. However, the aqueous solution of psilocybin is far less stable than the dried form and will readily degrade. This effect is strengthened by the presence of light, which is where the suggestion of keeping shrooms in the dark comes from. Because the stability is reduced in the presence of water, it will oxidize rapidly and degrade until no active compounds are left. (This oxidation is what led many growers to put oxygen absorbers in with their stored mushrooms; if there's no oxygen, theoretically there's no oxidation, right? ) However, the simplest solution is to ensure that all - and I do mean all - of the water is removed from the mushroom tissue. Psilocybin is still less stable than many other compounds, but when dried correctly, it will last much, much longer.
But there's moisture in the air around us, and plastic bags are not impermeable. While they'll work for a short time, the relatively moist air will eventually seep slowly into the bag, gradually reintroducing moisture into the shrooms. This is especially true in humid regions or seasons. Most folks eventually switch to a jar or other glass container that can be sealed airtight to store dehydrated mushrooms.

It's because the oxidation of psilocin involves the exchange of 2 hydrogen atoms. It takes a lot of energy to split the majority of gases in the air and combine with the 2 lost hydrogen atoms from psilocin. However the fruit bodies themselves have enzymes that activate when presented with water, and they themselves react with the psilocin by gaining electrons, probably through an OH- molecule to form more water, or by just taking the H+ as a single replacement reaction
In an aqueous solution of psilocin the addition of an antioxidant like ascorbic acid will reduce oxidation as well due to the now excessive H+ (and now a lack of hydrogen exchanges in the water)

wow thanks for the info, guess I owe my friends a new sack from my next harvest then. and will make sure to dry these fuckers out Hella before storing in glass gars from now on!
