Oysters in Mini Greenhouse

So, I'm in the process of building a mini greenhouse in my flat. It is not done yet, I'm planning on putting some fans both for helping the ultrasonic humidifier work better and FAE. Also, I couldn't install any lights yet.
At the moment, I'm just keeping it partially open so it can get some FAE, keep the USH running at a low setting and mist by hand two times a day.
Have some bags of oysters (oven bags) growing on straw with %15 alfalfa, supplemented with some calcium carbonate.
I had them colonizing for over 25 days. I think they were ready at 20 but I had an issue with the shelves I ordered so I sent them back and ordered new ones. Meanwhile they started burst pins from their GE holes, tearing the bags, despite the dry and stale air in the closet I kept them. I placed them in the greenhouse 3 days ago.
This is how they're doing at the moment:

The ones in the fourth picture seemed to be ready for harvest, so I harvested 750g of oysters (1.6 pound?) right after I took the picture.
About the spores, all I'm planning to do is to pick them before they drop their spores -I haven't seen any spores yet, I think I would see if they started dropping them, right?
Do you think this will be enough? If it's won't, I think I'll have to find another way to get rid of them, as the greenhouse is in my flat and I don't want spores in my lungs.
Also, how do you know when they're going to drop their spores? Right now I'm thinking I should pick right after they turn from convex to concave, is this right? Or should I pick right before they become concave, when they're flat?

Any kind of light will help those , just a cool white light bulb. Pick with edges curled under just before they go flat.Looking good for not being set up yet.

So does that mean if I pick them before they go flat, I won't have any spore related issues?

I'm not sure, but picking early will decrease the amount. Also it depends how many you plan to fruit inside a few bags or a room full makes a big difference.

I'm planning on having 5-6 bags on each shelm, meaning 20-24 bags total.
Small cap, long stem fruits are caused by low FAE I guess. Gotta deal with that.
Gotta also deal with humidity condensing on all surfaces, putting a fan to mix the humid air USH blows will hopefully solve that. That doesn't seem safe in terms of contamination.

FAE will help , the small caps and stretching can be from lack of light. Oysters are very responsive to light.

I'm impressed!! I saw a post of someones oyster grow, and they had rope lights. If space is a concern, that might be a solution.

I have rope lights but they just don't put out much light. I wrapped the whole strand up in a circle for one shelf. It works OK for 2' x3'.
Tomorrow I have 4-10watt LED flood lamps coming ,one for each shelf. I think they put out 1000 lux each.
