That makes a lot of sense, I noticed that I get a completely different buzz from coffee than I do caffeinated teas. Coffee gives me a particular anxiety that teas don't.

I've heard McDonald's actually has good coffee for the price. Tastes the same to me, 7-11 coffee tastes the same to me as Starbucks.

I'm not to well versed on the chemistry and whether you would go by boiling point or sublimation point or melting point or whatever but they're all pretty high temps for caffeine. Like 275-375f or something like that from a quick google search. I cook meats and breads and all kinds of stuff at those temps but the insides never reach those temps, they reach much lower temps. I imagine it's probably sorta the same for the coffee beans. You may roast them at a high temp but the internal temp never really reaches those levels.
