Edible pic of the day * 3
    #23961341 - 12/27/16 08:26 PM (7 years, 3 months ago)

Hi guys! Over in mush cult we have a pic of the day thread. It gets a lot of traffic, a lot of great pics, and is a lot of fun. While gourmet and medicinal mushrooms are welcome in there, it mostly see's actives cause it's in mush cult. I would like to see something similar in here, focused on gourmet and medicinal mushrooms.

So step up, post your delicious gourmet fruits. Or even your setups or spawn jars or new microscope. Most things are fair game. I will kick it off with some shiitake bulk cakes I got just starting to brown right now.

Ummmm... Been out of the hobby for a couple years now, but uhhh...
Isn't Pleurotus d'jamor supposed to be pink oyster?

Wait... just googled it.  Yeah, it is.  Nice fuckin' oysters though!  I'd keep that culture but also e-mail aloha and ask them to give ya the right culture this time   I'm sure they will, John Holliday is an awesome guy and runs a great business.  I'd support him over someone like Paul "sue everyone" Stamets anyday.

Oysters in monotubs getting enough air exchange?  Ehhhhh.... careful there.  Fan will just dry them out and make them abort unless you've got a humidifier inside.  No fan and there's no way they'll get enough air.  If it's a standard monotub like I'm thinking of, I'd take the lid off completely and turn it up on it's side, misting as often as you possibly can.  (The tub on it's side helps prevent CO2 from pooling in the bottom - and please lets not get into THAT mushcult argument)  I've seen it work for reishi over and over again.  Tub flat, even with top open?  Antlers.  Tub on it's side so CO2 doesn't collect at the bottom?  Conks.  Should work ok for oysters too.

They are certainly stretching, I've moved them to this orientation and have the two tubs close to keep humidity in.

Hate to be the one to tell ya, but that left pic is severely "leggy".  VERY common, especially trying to grow blues indoors.  They're the worst for some reason.  Now that they're at that point, worry less about humidity and more about airflow.  What I used to do in winter was put those clusters RIGHT by the open door of the greenhouse, and then mist them as much as I could.  They can recover pretty well from that, but if left in the same conditions you will get pretty small caps and lots of stem.

Rehydrate in warm/simmering water for 20-30 mins stir every so often until fully hydrate.
They reconstitute very well so you just cook them as you would fresh shrooms.
Sometimes I soak them in warm teriyaki or soy sauce to rehydrate, then cook and MAN are they tasty.

Haha, that's about where I'm at... I think I got about 3 bags like that in storage.  Anyone got any good recipes/reconstitution instructions for dried shiitake?

Rehydrate in warm/simmering water for 20-30 mins stir every so often until fully hydrate.
They reconstitute very well so you just cook them as you would fresh shrooms.
Sometimes I soak them in warm teriyaki or soy sauce to rehydrate, then cook and MAN are they tasty.

Didn't grow these obviously, but nice chanterelle harvest!  This was ~3 hours worth of picking by the wife & I this past year.  Had to lay them out on a twin size bed overnight.  Not sure we will ever see a year like that again.

Try adding plant food to wood, and let me know what happens. The plant food is what the roots absorb.
Add a touch of starch to overcome the requirements for a present food source.

Yes they work much better through black plastic. same with pinks.

The brown oysters to the left are the same culture as the one I previously posted.

The only thing keeping me from using black bags is unseen contaminates. How do you know if a bag is bad?

It's still very easy to pick out contams even with black bags. When you walk into a room full of healthy myc you feel and smell it. Daily inspections and sniffs and keep a 'window' bag that is clear. It gives you a little insight into how the batch as a whole is doing.

I joined a short 2 hour course on how to cultivate Oyster mushroom in coffee grounds. Only old ladies attending, and me :P

Mixed oyster mushroom spawn, coffee grounds, gypsum, cardboard and water. This is after 4 days. Looks bad on the bottom.

In my opinion you're better off treating coffee grounds as a supplement instead of making it the bulk of your substrate.
Oysters should indeed have no problems with colonizing it but in my experience the grounds do not retain enough water.

Indeed, could not agree more, its 2-3% nitrates, a bit rich, plus the lower pH.

this article from oregen state U puts coffee grounds at 2% nitrate by volume. saw another article that said 2.28% and the rest being organic matter. pH 6.5-6.8. I wonder if the caffeine has an inhibitory effect after a certain concentration

what do people around here supplement coffee grounds at in sawdust / straw grows?

I have not really noticed an inhibitory effect, but the fact that it just doesn't retain enough water. I only did it once though, for shits and giggles at work where I chucked the used coffee pads in a box each day. when it was full, I fruited it and I got one giant mushroom.

yes its your culture, will it be ok to clone? tempted to start from spores to see the difference in growth.

Not sure how much to prune from this log - any suggestions?

I would clone that if you can, It was a strong isolate I grew out. You can take spores and make your own isolate though.
My grows are horizontal, like your jar, but with casing, so I can pluck and patch or cut and patch the casing.

Try growing Kings from trays, or cakes-blocks, using a top fruiting or open fruiting method.

To clone the genetics, and try to get branching oysters.

That's why I said clone it, or take straw samples. One of my best, it should have a high yield.
This particular sample demolished trichoderma, bacteria and yeast. Very strong.

Haven't posted in here in a while...Been reviving my edible business. The following are some shots of one of my mush houses/setup etc.,  and my favorite Shiitake strain growing right now!

As mentioned in previous posts, I buy the blocks from another farm and fruit them out, because I haven't had the skill until now to attempt the rest...Just fruiting good Shiitake and getting consistant yields has been a lot to learn. These will yield .60-.70 pounds per block and sell for $15-18 per pound.

Doing first transfers on some clones from this batch today and cloning a few more late this afternoon. Thank you Shroomery for the help and the stoke!

Crispy - have you noticed a difference in shelf life when you harvest after the margin has uncurled?  It looks like you're letting them flatten out a bit (to get bigger of course), but I noticed when I did that it greatly reduced their shelf-life.  They would become soft much quicker in the fridge.  If I harvested while the margin was still sorta curled under and they were more "mushroom shaped" (not flat), shelf life was a lot longer.  But maybe that isn't the case with all strains?

Haha, I'd say let's hope they do.  That's a shitload of pins.  I'd let those nice big ones on the sides stay (why the hell do kings like to do that anyway?) and prune most of those little ones in the middle.  Although they might abort themselves anyway.  Those bigger ones are likely past the abort stage unless you really fuck something up.

of course, but kings are so nutrient hungry, if you let THAT many of them grow, you just get a bunch of smaller mushrooms instead of the same weight in a few, bigger ones.  It's easier harvest work for less mushrooms and most customers would rather have the bigger ones when you're calling em kings.

Shiitake. It's had a lot of varying humidity levels due to my intake fan failing. And a few popped out of the back trying to escape certain doom.

They are.  And fun and easy to grow with big flushes.  Get the Swordbelt strain if you can, it's way better than any others I've tried.

Interesting! It's actually 75 but none of the other fruits look like that- could possibly be from microclimate within GH. I've been thinking about drying a batch as several Korean dushes I like use dried Shiitake.

There is a shelf life difference when harvested late. For farm gate, people like the giant ones here, they don't sit, so I make them bigger sometimes. For retail...much younger shrooms for sure...

This is "66" I'm told...Comes from an Organic farm in Vancouver area...It rocks. Cold weather/hot weather all of it.

I have this on plates and it looks good. I'll be doing transfers to 2T in a day or two if anybody wants to do a trade. I have it in grain right now also and will be testing it out for vigor as it came from another farm.

The other farm just restarted the culture recently, so I'm hoping it will be good to go...Plates have been transfered once since these pics...They are coming out of refrigeration tomorrow.

Holy shit nice flush!  That's what a good strain of Pioppino SHOULD look like.  As far as shelf life, I don't think it's as long as some others...  Going by my shitty memory, I'd say shorter than oysters or shiitake if those are harvested at the right time (early enough).  Someone will I hope correct me if I'm wrong, but I'd say to be safe, about a week.  Harvesting them earlier, before those caps flatten out and crack apart, as it goes with most mushrooms, will extend shelf life.

The other thing you may have already noticed is they are quite fragile.  RR once mentioned IIRC that he stopped letting people touch them at farmer's markets because they'd break apart and look like shit, and then nobody would want to buy them.

I'd pre-package them in those breathable strawberry/blueberry style containers and sell them in pre-weighed amounts.  They are most delicious and people will love them, but ya can't do the common farmers market thing and put 'em in a big box and let people finger through them, or they get destroyed.  And yeah, shelf life is shorter than most so ya gotta sell 'em quick.

First go at oysters, just wanted to share and also a little question, i was wondering if the stemmyness is normal for oyster pins or are they not getting enough O2? They're pearl oysters if it really matters?

Here they are 2.28)

Here they are 3.1)

Increased airflow does almost nothing for them if it is not providing Fresh Air Exchange- they breathe oxeygen and let out CO2- elongated stems come from them searching for oxygen (fresh air) and out away from the highly concentrated CO2 that surrounds them. Sure air circulation without being fresh may help with evaporation some (which is a pinning trigger), but even them if you are just recirculating super humid air you'll get less evaporation.

Could not agree more, the surrounding air should be considered in a similar way to a substrate.
Mock example: For every 100 units of air you need 80 units of water, 10 units of O2.

Lets say you have 90 units of water, 8 units of CO2, that leaves 2 units.

At an educated guess, I would say a fruiting fungus may use O2 in caps to oxidize materials.
Probably to produce nutrients and-or environment required for spore formation.

ha well... humidity between 70 - 85 because my ultrasonic broke so i've been hand misting which is why some of them have bumpy caps.
Temp between 10 - 12c

Same as me then, except I'm running 14-15°C, not misting. Time scale for full size?

^^^ Looks like a great start to a nice reishi grow!  I bet you could get some big conks if you just turned the bag on it's side, leaving the plastic there to help hold in moisture.

Hmmm... pretty smart idea. I was going to just open up the top and put it in a mono or outside if temps allowed it, but that sounds easier.

Yeah if you've got ANY humidity in your area at all, once they're past the pin stage they don't need near as much, and lying on their sides allows the CO2 to fall out and provide them with more oxygen so you can get conks.  Mist as often as you can and the water that sticks to the inside of the bag and pools at the bottom helps keep humidity high enough, right there in the bag.  It even worked fine for me in my basement in the winter, where I've got NO humidity.  Reishi really only needs high humidity to form a good pinset and start the fruits, which you've already accomplished there.

I was under the impression they needed relatively high temperatures to conk out? But you did in your basement in winter? Humidity is around 80-90% this time a year but temps are around 10 C or 50 F, dropping to almost freezing overnight. Bit too cold, no? Think they'll do fine in a monotub on their sides with top holes open? I don't have a greenhouse or fancy set-up. (And I'd rather not spores get all over my room )

Nope, they need high FAE to conk out, not humidity.  But yeah you're definitely right about the temps - 50F I don't think they'll do too well at, maybe at the TOP range but if it's dropping below that I wouldn't risk it.

Yeah I think they'd do fine in a monotub on it's side.

But I did mine with the top off completely, so I'm not sure whether holes open will be enough, but give it a shot!

The spores are DEFINITELY something to watch out for, as you can see here:

It all depends on when you harvest them.  If you wait for the conks to get full size, you're gonna have a shitload of spores.  But if you harvest right as soon as you see any spores, you're fine.

Damn dude, that 3782 block looks a little overcrowded!  See how the mushrooms are bumping into each other, bending their caps?  I think your yields may be too high.  You might wanna switch to a shittier strain.

  j/k, that's freakin' awesome.  I've had that culture for like 2 years now and still haven't grown it.  I REALLY, really must do so.  Awesome results   You are motivating me... maybe if I hang out here long enough, I will actually start growing some mushrooms again.  Because seeing pics like that makes me JEALOUS!!!  And hungry :crazy2:

One question - is it sensitive to pinning early invitro (before fully browned) if you have a slight temp drop?  I've had issues with other strains doing that...  But now I live in my own house with a relatively stable basement temperature, of probably 55-60ish?  Think that strain would colonize and fully brown just fine at those temps?

I grow them on HWFP with about 8% wheat bran. I just incubate at room temp. so there isn't much temp fluctuation in temps. After they brown, I cold shock in the fridge from 1-2 days. Then I slap the shiitake out of them. Then just wait for a nice pinset before striping the bag and rinsing them off. They should colonize ok at 50-60. Maybe a little slower. I'm at about 70f for incubation.

Here's the reishi you send me, I'm not as good as you yet. It's fun though. It's sticking its head out of the bag now. He's a bit impressed with all the shiitake around him  :frenchie:

It's supposed to be in vitro reishi, but it is a very bad example. The antler is crawling up on the side of the bag, it's supposed to be in the middle. I already harvested several antlers that were better shaped. I think I 've put in too much sawdust, there's not enough room between the block surface and the top of the bag. I'll get better along the way. It's fun, changes a bit from shiitake ever day, week, month, year.

Haha, I love the table ornament.  Got an old Chia-pet sitting around?  That would be cool to fill with reishi substrate and see what happens.

Nice fruit quality there Mystic!  I'd harvest a day sooner though, before those edges of the caps start to get wavy like that.  Not only will it reduce much of the spore load, the fruits should have a longer shelf life.

I kept this very bacterial Reishi jar for fun to see what would happen and it seems to be pinning...Are those Reishi pins?

Any trusted identifiers in here?
Last summer I collected what looked like oysters up here in Alaska. They were growing on dead aspen tree trunks / fallen branches.  Definitely a rare find. According to some sources Alaska is too far north to be in standard oyster range ... in stead there is something similar... or at least in the family.

I think this is what I have:
https://en.wikipedia.org/wiki/Pleurotus_populinus

I cloned it and it has fruited on agar but I'm going to do a run of it on aspen shavings and or a mix of aspen shavings and alder fuel pellets. It has a very intriguing almond smell and a whitish spore print with a hint of lavender color to it. Once I get it fruiting I'll show some pics...

Yea they do grow against the plastic but it isn't the bags fault. And yea, I leave them closed too
